Christmas Baking Recipes

Hey ya’ll. I’ve had a few requests for the recipes of the Christmas baking I made
last year.
So here they are:
CHOCOLATE MOUNDS
Mix in a double boiler (or in a large pot over low heat):
2 cups chocolate chips
2 cups butterscotch chips
Once melted, stir in:
2 cups unsalted peanuts
2 cups chow mein noodles
Drop by teaspoon onto waxed paper on cookie sheets and cool in fridge to harden.
DONE! How easy is that one. It’s my hubby’s fave cookie at Christmas time. I make them in batches or else he would eat them all in a week!
PEPPERMINT BARK
12 oz. of good quality dark chocolate (I use Bernard Callebaut)
12 oz. of good quality white chocolate
5 regular sized candy canes, crushed
Line the bottom and sides of a baking sheet with foil. Melt white chocolate in a double boiler (or medium saucepan over low heat). Once melted, immediately pour onto the prepared pan and smooth out evenly. Place in fridge for about 30 minutes or until chocolate is set.
Melt dark chocolate in a double boiler. Once melted, immediately pour over the cooled white chocolate. Smooth until spread evenly. Sprinkle the crushed candy canes over the dark chocolate and place in fridge for about 30 minutes.
Remove the peppermint bark by lifting the foil. Peel back the foil and break the bark into pieces.
Another EASY one! So far, that’s 2 recipes that require no baking!
There ya go….nice and simple Christmas squares/mounds/bark…..
