Good morning everyone! How are you today? I’m about to head out grocery shopping, but first I want to share with you one of my favorite dinner recipes.
I love quesadillas! You can put anything inside a tortilla….the possibilities are endless. But one of my favorite ways to prepare them is with a hint of BBQ flavour.
BBQ CHICKEN QUESADILLAS
2 boneless, skinless chicken breasts
1 Tbsp extra virgin olive oil
1 tsp chili powder
1 tsp cumin
1/4 tsp garlic powder
1/4 tsp sea salt
1/4 cup diced onion
2 cloves garlic, minced
1/2 cup frozen corn
2 Tbsp BBQ sauce
1 can refried beans
2 Tbsp chopped cilantro
**1/2 cup shredded mozzarella cheese
**4 large whole wheat tortillas
Preheat oven to 350F. Combine chili powder, cumin, garlic powder, and salt in a small bowl and set aside. Follow the directions on how to roast chicken breast found here.
While chicken is roasting, spray a frying pan with non-stick spray. Heat over medium heat. Add onion, garlic, and corn. Saute until corn is starting to brown. Remove from heat and stir in BBQ sauce. When chicken is done, shred it and stir into corn mixture.
Increase oven temperature to 425F. Spray a baking sheet with non-stick spray and place 2 tortillas on it. Spread on some refried beans. Top with chicken mixture, cilantro, and cheese. Place 2 tortillas on top and spray with non-stick spray. Place in hot oven for about 10 minutes, or until cheese is melted and tortillas are beginning to brown.
Slice quesadillas with a pizza cutter and serve.
I like to top mine with a spoonful of salsa. So good!
**To make this meal gluten-free and dairy-free**
- use a gluten-free tortilla instead of a whole wheat tortilla
- substitute the mozzarella cheese for nutritional yeast
- use a gluten-free BBQ sauce
