Howdy friends! Hope your morning is going well
The sun is shining here and it’s supposed to be a hot day! Love it. I suspect we’ll be spending most of the day outside.
As you know, I’m a meal planner. Once a week, I make our weekly menu. Sometimes it’s an easy task, I’ll have lots of ideas about what to eat. But other times, it’s a chore. I don’t feel like making this or I don’t feel like eating that.
Our meals usually consist of a protein, which in our case, is usually chicken. Then I also make a carbohydrate as a side. This can be potatoes, bread, yams, or another starchy type of vegetable (my kids don’t eat pasta…..go figure). And to round out the dinner plate, I also serve a vegetable. Broccoli and fresh veggies are our favorites. So basically, that’s 3 foods I have to plan for each dinner. By the end of it, my brain hurts!
But there are some foods that make a regular appearance in the weekly menu. One of those foods is oven fries. I love fries, but I hate the greasy ones served at restaurants. I’m also not a huge fan of the frozen ones you can buy in the grocery store, there tends to be a lot of sodium in them. So, I make my own. And let me tell ya, they are better than any restaurant fry!
OUR FAVORITE BAKED OVEN FRIES
1 lb Yukon Gold potatoes (about 3 large potatoes)
1 Tbsp extra virgin olive oil
2 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp pepper
1/2 tsp sweet smoked paprika (optional)
sea salt to taste
Preheat oven to 425F. Wash potatoes and cut into 1/2″ thick strips. Place in a large bowl and toss with olive oil and spices. (Feel free to add whatever spices you like)
Cover a baking sheet with foil and lightly coat with non-stick spray. Place potatoes in a single layer on baking sheet.
Place potatoes in the oven and bake for approximately 30 minutes, turning them over once halfway through.
Mmmm……fries. They are a little crispy on the outside and nice and soft on the inside.
I love to serve them alongside chicken tenders, fish, or basically anything. I also like to sprinkle a little bit of Parmesan cheese on top! Of course, my boys like to dip them in ketchup.
The next time you are at the grocery store, buy a large bag of Yukon Gold potatoes. That way, when you are wondering what to make your family for dinner, you always have this healthy and tasty option!
