Taco Salad

Good morning everyone.  We had a crazy storm the other night that actually woke me up it was so loud.  But this morning the sun is shining and it’s supposed to be warm icon smile Taco Salad

Last night, I made one of our favorite meals: Taco Salad.

If I ask Caleb what he would like for dinner, his answer is always taco salad.  And really, who can blame him?!  It’s so good.

 Taco Salad

Taco salad satisfies everyone in our house.  The man likes the meat.  The boys like the cheese.  And the girl likes the greens.

TACO SALAD (Serves 4)

1 lb extra lean ground beef
1/2 small onion, chopped
1 clove garlic, minced
1 Tbsp chili powder
1 tsp cumin
1/4 tsp salt
1/4 tsp pepper
1/3 cup low-sodium ketchup

6 cups romaine lettuce, chopped
2 plum tomatoes, chopped
14 oz can no salt added black beans
12 oz can no salt added corn
3 green onions, sliced
1 cup low-fat cheddar cheese, shredded
1 avocado, diced
salsa
Tortilla chips (optional)

Spray a skillet with non-stick spray and heat over medium-high.  Add ground beef, onion, and garlic and cook until beef is no longer pink.  Add chili powder, cumin, salt, and pepper and cook for 5 minutes.  Add the ketchup and cook an additional 2 minutes.  Set aside.

On individual serving plates, add romaine lettuce.  Top with beef mixture, tomatoes, black beans, corn, green onions, cheddar cheese, and avocado.  Finish with a spoonful (or 2) of salsa.  If you like, you can serve tortilla chips on the side.

looks yummy. Do the boys eat the greens and all? Blake likes taco meat and cheese and tortilla wraps, but won't put it all together in a taco yet. Colby,… yeah well not so much

Looks tasty! I'm going to try your seasonings! I always just grab a packet of Taco Bell seasoning

that's really diffrent than the taco salad we are used to that uses catalina dressing, looks great!

Serving different ingredients like meat, tacos, and veggies make the salad tasty.
