Good morning! How are you doing today? At least it’s Wednesday and the week is already half over
When we were in Tucson earlier this year, my mom and I made an amazing quesadilla for dinner. It had asparagus, grape tomatoes, onion, cheese……
But I couldn’t remember what else. And of course, I couldn’t find the recipe for the life of me. That’s when I decided to try and remember the flavours. After a couple of tries with different spices, I think I recreated it. Well, whatever I made, it was damn good.
| CHEESY ASPARAGUS QUESADILLAS
Ingredients: Instructions: Add the steamed asparagus, tomatoes, and cilantro. Cook for a couple of minutes, until all of the flavours are combined. Transfer asparagus mixture to a bowl and set aside. Wipe inside of skillet with a paper towel and spray with cooking spray. To make quesadillas, divide the asparagus filling among the tortillas, spreading it on 1/2 of the tortilla. Sprinkle with mozzarella cheese and fold the tortillas in half. Heat the skillet over medium heat. Add 2 tortillas and cook approximately 2 minutes per side or until golden. Repeat with remaining 2 tortillas. To serve asparagus tortillas, cut in half and top with a spoonful of your favorite salsa. Serves 4 |
I love the flavour of these tortillas. I especially love them with a little bit of salsa on top. These tortillas make a great side to chicken or fish. Last night, I served them with Asian Salmon. The combination was perfect!

Those look fantastic. I'll have to try them on a day when my boys aren't home. I cannot for the life of me, get my kids to eat quesadillas. What's not to like?

ohhhh Yes, please! Great idea! Would your boys eat them? I can't really see mine going for it. But I suppose I can just halve…or quarter, Ha!…the recipe for me
We love quesadillas here! We usually have them once a week. They're one of the boys' favorite meals. And we put all kinds of stuff in them…it's fun creating different quesadillas. We haven't put asparagus in them yet, but I love asparagus so, I'll try them for sure!
