Since my “diagnosis”, I’ve been busy in the kitchen testing my favorite recipes without using eggs. One of these recipes is my favorite banana bread. I have been trying to create the perfect recipe for banana bread for the past few years! And I had finally made one, but of course, it had eggs
However, when I looked up egg substitutes online, I found that you can use mashed fruit. Mashed banana and applesauce seem to be the popular ones. Since this recipe already uses banana, I thought I would also add some applesauce. And….it turned out perfect! Moist, healthy, and totally yummy, this banana bread is my night time indulgence snack Every. Single. Night.
| MOIST AND HEALTHY BANANA BREAD Prep time:10 minutes Cook Time: 45 minutes Serves:8 Ingredients: 2 cups whole wheat flour 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp sea salt 3 medium, ripe bananas, mashed 1/2 cup applesauce 1/2 cup skim milk 1/3 cup honey 1 tsp vanilla 3 Tbsp chocolate chips Instructions: Preheat oven to 350o. Line an 9” x 5” loaf pan with parchment paper and set aside.In a large bowl add flour, baking powder, baking soda, and salt. Stir to combine. In another bowl, combine bananas, applesauce, milk, honey, and vanilla. Add wet ingredients to dry ingredients and stir until combined. Stir in chocolate chips.Pour mixture into loaf pan and bake in preheated oven for approximately 45 minutes, or until toothpick inserted in center of loaf comes out clean. |
This banana bread is the best I’ve ever tasted. It’s so moist! And I love the addition of the chocolate chips
And don’t be afraid to smother a nice thick slice with your peanut butter.
So the next time you have some browning bananas sitting in your cupboard, go and make this. You’ll be glad you did!

I do have some ripe bananas so I may try this, without the choco chips. that way I'll be less tempted to eat it!

This banana bread is sooo good for being healthy! I did add two more tablespoons of chocolate chip thou (I love chocolate!!) Very delious and this will be my new favorite banana bread…pinning it now!!

I love how healthy it is compared to other banana bread….I don’t feel so guilty when eating it
