How to Roast Peppers

Hi!  How are you?  How was your Monday?  It was back to regularly scheduled programming around here, which meant driving back and forth to school 4 times.  Oh…and I mustn’t forget laundry and ironing.  By the end of the day I was exhausted.

Today, I wanted to share how I roast bell peppers.  Do you ever come across a recipe that asks for roasted red peppers?  I used to skip recipes that called for that ingredient, thinking it was either too hard to roast my own or, I didn’t want to buy the ones packed in oil.

But I soon came to learn that roasting peppers is really easy.

Here’s how.

Step #1: Set your oven to broil and line a baking sheet with foil.

Step #2: Cut bell peppers in half, throw away the seeds, and place on prepared baking sheet, cut side down.

Step #3: Broil on top rack of oven until peppers start turning black.

Step #4: Place charred peppers in a bowl and cover with saran.  Let sit approximately 20 minutes.

Step #5: Remove peppers from bowl and peel the skin off.  The skin should peel off easily. If it doesn’t, either you didn’t broil them long enough, or you didn’t let them sit in the sauna for the appropriate length of time!

Once the peppers are peeled, you can slice or dice them however you want.

Now, wasn’t that easy?!

I need to get peppers to make hummus, hmmm maybe I’ll roast my own this time

So much better than the jarred variety.

If I only want a small amount, I’ll hold it over the open gas flame on my cook top with some tongs. Probably a safety issue with that though…
