Good morning! How are you today? Are you back to the daily grind? The kids have the rest of the week off, but I know it’s going to go by fast.
As you are well aware, it’s winter time. And with winter comes cold and flu season. We’ve already experienced 2 colds and 1 bout of a nasty flu virus in our house. And it’s only January!
I don’t know about you, but when I’m sick, I don’t feel like eating my usual foods. But the one food I do like to eat is soup. Good old fashioned chicken soup! I’m sure that someone (probably your mother) has told you to eat chicken soup when you have a cold. And there is good reason for that: the broth in chicken soup has anti-inflammatory properties that aid in soothing your sore throat and reducing mucus production (source).
For this soup, I prefer to make my own chicken broth, but if you don’t have the time, store-bought broth will work just fine.
|Ol’ Fashion Chicken Soup||
- 1 lb cooked, shredded chicken breast (use 1/2 of a rotisserie chicken)
- 2 tsp extra virgin olive oil
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 900 ml no-salt added chicken broth
- 3 cups water
- 2 garlic cloves, minced
- 1 tsp low-sodium soy sauce
- 1/2 tsp Mrs. Dash Original
- 1/4 tsp fresh ground pepper
- 1 cup whole wheat fusilli pasta
- In a large soup pot, heat olive oil over medium heat. Add onion, celery, and carrots. Saute until vegetables have softened.
- Add chicken broth, water, garlic, soy sauce, Mrs. Dash, pepper, and chicken.
- Bring to a boil and add pasta.
- Reduce heat to a simmer and cook for 20 minutes.
Alternatively, you could put all ingredients (except the pasta) into a slow cooker and cook on low all day. Add the pasta 20 minutes before you eat!
Mmmm…warm, comforting chicken soup. Perfect for those cold winter nights. Of course, my hubby likes it served with some freshly baked bread on the side.
