No-Bake Chocolate Torte

by Jen on February 22, 2012

Hello!  Welcome back.  How are you today?  I think I’m slowly on the mend.  As in slooooooooow-ly.  In the mornings I feel terrible, but by lunch time I can breathe out of one nostril.  Nice.

I think it’s time for a dessert recipe, don’t you?!  I rarely make dessert.  All that sugar and butter kinda turns me off.  Don’t get me wrong, I love dessert as much as you all do, but I tend to save my indulgences for special occasions such as birthdays.  Or selling our house.  Or perhaps beating this cold!

The odd time I will bake a dessert for the family, if they’ve been nice to me.  The desserts I bake on this other rare occasions are usually healthier versions of our favorite indulgences.  When I came across this recipe for a no-bake chocolate dessert, I knew I had to try it.  I’ve never been disappointed by Angela’s recipes!

No-Bake Chocolate Torte

Prep Time: 30 minutes

Total Time: 30 minutes

Serving Size: 12

  • 2 cups pecans
  • 1/4 cup cocoa powder
  • 2 Tbsp coconut oil
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2 ripe avocados, pitted and scooped out
  • 1/3 cup skim milk
  • 2/3 cup maple syrup
  • 1 Tbsp smooth almond butter (or peanut butter)
  • 1 Tbsp cornstarch
  • 1/4 tsp sea salt
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder
  • 1 1/4 cup chocolate chips, melted

  1. Spray a round springform pan and line it with a circle of parchment paper. In a food processor or powerful blender (I used my Vitamix), lightly blend the pecans until crumbly. Add in the rest of the crust ingredients and lightly blend until just mixed. Scoop mixture into prepared pan and press down firmly and evenly with a spatula. Put in freezer to set.
  2. Place all filling ingredients (expect chocolate chips) into your food processor or blender. Blend until smooth. In another bowl, melt chocolate chips in the microwave (checking every 30 seconds to make sure they aren't burning!). Pour melted chocolate into filling mixture and blend until smooth.
  3. Remove crust from freezer and spoon filling onto crust. Smooth with a spatula.
  4. Place in freezer for 2 hours to firm.
  5. To serve, remove torte from freezer and let sit 5 - 10 minutes before serving.

Usually when I come across a “vegan” dessert recipe, it asks for tofu.  Can you say, blech!  I’ll admit, I was a little skeptical about using avocado in a dessert recipe.  I love avocado, but the last thing I want is my beloved chocolate tasting like avocado…know what I’m sayin’?  But, you certainly can’t taste the avocado.  I had Mark and the kids fooled.  So there, that’s all the proof you need.

This dessert is very light tasting, feel free to go back for seconds…and thirds…and.  It’s also so easy to make because you don’t have to bake it in the oven!

So, the next time you need an excuse to make a dessert, like, “my- kids-are-driving-me-crazy-get-me-dessert-now!” kind of excuse, then make this!
