Maple Cranberry Chicken

Hello!  How are you?  Happy that we are nearing the end of the week?  The weather here is gorgeous today.  It feels like spring.  Now, if all the snow would just melt…

I’ve been wanting to share this chicken recipe with you forever.  I’m sure you’re asking, well, why didn’t you then?  The reason is, I’ve been saving it for a special occasion.  Okay, not really.  I was just lazy and didn’t have any photos of it.  There are some nights that I don’t want to take pictures of my food…I just want to sit down and eat it!  Especially this recipe.

Maple Cranberry Chicken


Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes

Yield: serves 4

Recipe adapted from The Healthy Family


  • 2 tsp coconut oil (can use EVOO)
  • 2 garlic cloves, minced
  • 1/4 cup whole wheat flour
  • 1/2 tsp dried rosemary
  • dash of sea salt and pepper
  • 4 boneless, skinless chicken breasts
  • 3 green onions, sliced
  • 10 white mushrooms, sliced
  • 1/3 cup maple syrup
  • 2 Tbsp apple cider vinegar
  • 2 Tbsp water
  • 1/4 cup dried cranberries


  1. In a bowl, combine flour, rosemary, salt, and pepper.
  2. In a large skillet, melt coconut oil over medium heat. Add garlic.
  3. Coat the chicken breasts in the flour mixture and add to skillet. Brown chicken on both sides.
  4. Add the green onions and mushrooms.
  5. In a small bowl, combine the maple syrup, vinegar, and water. Pour over the browned chicken. Sprinkle cranberries around chicken and reduce heat to a high simmer.
  6. Simmer until chicken is cooked through, approximately 20 minutes (check the chicken frequently to make sure the liquid isn't evaporating too much. Add more water if it is).
  7. Serve chicken on individual plates and top with leftover sauce.


This chicken combines the best of both worlds; sweet and savoury.  I love the tartness of the cranberries mixed with the sweetness of the maple syrup.  And the mushrooms add wonderful texture to the meal.

This chicken recipe is a family favorite in our house.  It’s so easy to make, yet so impressive to serve.  So not only can you serve it to your family, but you could also serve it to guests.

There is usually a little bit of sauce left in the pan after cooking the chicken, so this dish would be great served with rice and your favorite veggie.  I love saucy rice, don’t you?!
