Fruity Chicken Salad

I had posted this recipe a couple of years ago, however, the picture of the salad was pretty bad (I’ve come a long way in my photography since then) and because this salad is one of our favorites, I figured it deserved a whole new (and much prettier) post.

I love to eat salads, however, convincing my husband that we should eat more salads for dinner wasn’t easy.  But I found a way.  Add meat, some fruit, and a big hunk of freshly baked bread.  Done.

This salad is a family favorite.  But really, who wouldn’t like a salad loaded with sweet fruit, crunchy nuts, and a tangy dressing.  It’s the perfect spring and summer salad.

Ingredients

  • 1 head Romaine lettuce
  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 1 cup red seedless grapes
  • 1 jar mandarin orange segments packed in light syrup
  • 1 avocado, peeled and diced
  • 1/4 cup chopped walnuts
  • 1/3 cup fat-free plain Greek yogurt
  • 3 Tbsp pure orange juice
  • 1 Tbsp vinegar
  • 1 Tbsp brown sugar
  • 1/2 tsp curry powder
  • dash of sea salt and pepper

Instructions

  1. Wash lettuce and tear or cut into bite sized pieces. Arrange on individual serving plates.
  2. In a medium bowl, mix together yogurt, orange juice, vinegar, brown sugar, curry powder, salt and pepper. Add chicken, grapes, mandarin oranges, and avocado to dressing. Mix together and serve over lettuce.
  3. Sprinkle walnuts on top.

Notes

Instead of cooking 2 chicken breasts, you could use 1/2 of a rotisserie chicken, cut up.

I love the combination of the sweet mandarin oranges paired with the creamy avocado and crunchy walnuts.  The orange and curry flavoured dressing brings it all together.  Of course, the added protein from the chicken makes it a complete meal even your man will eat!
