I had posted this recipe a couple of years ago, however, the picture of the salad was pretty bad (I’ve come a long way in my photography since then) and because this salad is one of our favorites, I figured it deserved a whole new (and much prettier) post.
I love to eat salads, however, convincing my husband that we should eat more salads for dinner wasn’t easy. But I found a way. Add meat, some fruit, and a big hunk of freshly baked bread. Done.
This salad is a family favorite. But really, who wouldn’t like a salad loaded with sweet fruit, crunchy nuts, and a tangy dressing. It’s the perfect spring and summer salad.
I love the combination of the sweet mandarin oranges paired with the creamy avocado and crunchy walnuts. The orange and curry flavoured dressing brings it all together. Of course, the added protein from the chicken makes it a complete meal even your man will eat!
