Ahhh…spring! Some things I love about spring: singing birds, green grass, budding tulips, longer daylight, asparagus. Asparagus? Yes!
When I’m cooking, I try to use vegetables that are in season. There are two reasons for this. First, vegetables in season are fresh. Second, vegetables in season tend to be cheaper.
Back in the day, when I first started cooking for our family, I used to microwave or boil all of our veggies. Not only were our veggies pretty plain, but I probably boiled away most of the nutrients from the vegetables! Now, I prefer to steam or roast all of our veggies, with roasting being my favorite way to cook them. I find roasting really brings out the flavour.
After roasting asparagus a few times with just some olive oil, salt, and pepper, I wanted to add a little bit more flavour. One flavour I can’t get enough of is lemon. I always keep a big bag of lemons in the fridge. I slice one everyday and put it into our water. Lemon is so refreshing. So why not roast lemon with asparagus?! Best. Decision. Ever.
I love how the juice from the lemon infuses into the asparagus while it’s roasting. This is the perfect spring side dish. And it’s so simple to make, anyone can do it.
Ingredients
- 1 bunch asparagus
- 1 Tbsp extra virgin olive oil
- 1 lemon, sliced
- sprinkle of sea salt and pepper
Instructions
Preheat oven to 400F.
Wash asparagus and snap off hard ends.
Place asparagus on a baking sheet and drizzle with olive oil. Using your hands, mix together asparagus and oil, making sure it's well coated.
Spread asparagus in a single layer. Place two lemon slices underneath the asparagus and place three lemon slices on top. Sprinkle with salt and pepper.
Place in preheated oven for approximately 15 minutes, until asparagus is tender crisp.

Oooh, yummy, yummy. I love roasted anyhting and last week made roasted carrots and radishes. Another yummy!
Can’t say I’ve ever tried roasting radishes..but I don’t see why not!
