A clean eating homemade tomato soup. Perfect for those cool winter months!
So, you’re probably thinking why on earth I’m sharing a soup recipe with you when it feels like summer outside.
Well…even though it feels like summer some days, there are still those cool rainy days that you’re going to feel like soup. And I don’t know about your kids, but my kids are always up for grilled cheese with tomato soup no matter what the temperature outside.
As a general rule, I tend to stay away from canned soup because of the added sodium. I’m sure there are some decent ones out there, but wouldn’t you rather have some homemade soup with all natural ingredients?
Like I said, my kids and hubby love tomato soup and grilled cheese. So I went looking for a healthy homemade version. I originally found this recipe, but made a few changes to decrease the sodium even more.
Nothing like a little handful of cheese on top!
This soup has a wonderful flavor to it due to the addition of fresh basil.
Some of the ways I’ve made this soup healthier than the canned version:
- used no-salt added tomatoes and broth
- used Greek yogurt instead of cream
- used low-fat cheddar cheese instead of the full-fat version
Feel free to serve this Healthy Homemade Tomato Soup with a big slice of whole wheat bread or a warm grilled cheese sandwich. And don’t be afraid to dunk!
