Taco Pizza

I’m back with another pizza recipe!

I know, I know, I just posted one last week, but technically, that was from the archives…I was only trying to make it look pretty.

You see, the thing is, I really can’t help myself when it comes to pizza.  I love it.  Why do I love it so much?

  • It’s a meal the whole family will eat
  • It’s easy to make
  • It’s so versatile, you can put anything on pizza
  • Pizza is ALWAYS good as leftovers for lunch the next day!

I told you last week that the BBQ Chicken pizza was our favorite.  Well, I’m here to tell you that we have another favorite pizza, Taco Pizza.  You can have more than one favorite, right?

Just look at those big chunks of tomatoes sitting atop the ooey, gooey melted cheese.  This pizza is basically your favorite taco toppings put onto a pizza crust.  Simple idea, yet so delicious.

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: serves 6

Recipe adapted from Dinner Survival

Ingredients

  • 1 large whole wheat thin crust pizza shell
  • 1/2 lb. extra-lean ground beef
  • 1 tsp chili powder
  • 1 tsp dried onion flakes
  • 1/2 tsp cumin
  • 1/4 cup low-sodium ketchup
  • 1/4 cup chunky salsa
  • 1/4 cup water
  • 2 green onions, chopped
  • 2 Roma tomatoes, chopped
  • 3/4 cup light Tex-Mex cheese
  • cilantro (optional)
  • non-fat plain Greek yogurt (optional)

Instructions

Preheat oven to 400F. Spray a pizza pan with olive oil and set aside.

In a large skillet, cook ground beef until no longer pink. Add spices while meat is browning, stirring occasionally.

When meat is cooked, add ketchup, salsa, and water. Stir and reduce heat to simmer for approximately 10 minutes, or until it is thickened.

Spread meat mixture over pizza crust and top with green onions and cheese. Bake in preheated oven 10 minutes, or until cheese is melted and crust is browning.

When pizza is done, remove from oven and top with chopped tomatoes and any other toppings you like. Slice and serve.

Our whole family loves this pizza (not just me!)  Some of the ways in which I’ve made it healthier than your usual pizza:

  • Whole wheat thin crust
  • Extra-lean ground beef
  • Low-fat cheese

Feel free to add even more taco fillings such as lettuce, more salsa, or a dollop of non-fat plain Greek yogurt.  Just remember to add them on after you’ve baked it in the oven.

Add a side salad or some fresh veggies to this, and you’ve got yourself a complete meal.

I was wondering if I were to make my own pizza dough, if I added taco seasoning to the dough before baking it, would that intensify the taco flavor?
