I’m sure you’ve all heard of chai tea. I had my first chai tea experience a couple of years ago and fell in love. It’s no wonder since I love cinnamon, ginger, and cardamom. So when I found a recipe that incorporated these spices into a banana bread, I knew I had to try it.
Not only is this bread absolutely delicious, but it’s extremely moist. I love the flavours of the different spices mixed together. The glaze adds a little bit of sweetness and flavour to the bread, but if you prefer to leave it out, you’ll still love this bread!
Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- 3 medium bananas, mashed
- 1/2 cup unsweetened applesauce
- 1/2 cup skim milk
- 1/3 cup honey
- 3/4 tsp ground cardamom
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp allspice
- 1-1/4 tsp vanilla extract
- 1/4 cup icing sugar
- 1 tsp skim milk
Instructions
Preheat oven to 350F. Line or grease a 9x5-inch loaf pan and set aside.
In a large bowl, combine the bananas, applesauce, milk, honey, and 1 tsp vanilla.
Add both flours, baking powder, baking soda, and salt. Stir with a spatula until combined.
In a small dish, combine cardamom, cinnamon, ginger, and allspice. Stir 1-1/2 tsp of the spice mixture into the batter.
Pour batter in prepared loaf pan and bake for 45 - 50 minutes, or until toothpick inserted in center of loaf comes out clean.
To prepare glaze, combine icing sugar, milk, and remaining spice mixture. Pour over cooled loaf.
http://thefithousewife.com/2012/06/chai-banana-bread.html/I loved enjoying a slice of this bread with my afternoon tea. A little bit of light margarine or sugar-free jam would pair well with this bread but honestly, it’s great just as it is.
Some things that make this bread healthier than your regular banana bread:
- I added some whole wheat flour to increase the fibre content
- I took out the refined white sugar and used a reduced amount of honey
- I substituted unsweetened applesauce for the eggs
Overall, this bread is a nice change to the traditional plain banana bread.
Enjoy!
