Honey Flax Bread

I’m not sure if you’ve noticed, but I often add “freshly baked bread” to our weekly menu plan, especially if we are having soup.  I just love the warmth and flavor of fresh baked bread.  That being said, I don’t have the time to knead and rise bread, so that’s when I turn to my bread machine.

The bread machine is a wonderful invention.  You just throw in your ingredients and then let the machine do the work.  The bread turns out wonderfully and you don’t have to spend hours waiting for it!  I have a book with hundreds of bread machine recipes, but the one we go back to over and over again is the Honey Flax Bread.

This bread has a touch of honey which gives it a little sweetness, while the added ground flax adds important Omega-3’s and fiber.  I usually make this bread to eat with soup, but sometimes I’ll make it as a side with chicken or pork tenderloin.  It’s extremely low in fat and healthy.

The rest of the family likes to add some light margarine to their slice, but I prefer mine without…it’s just as good.  And my favorite piece of the loaf is the crusty end piece!

Honey Flax Bread

Prep Time: 10 minutes

Cook Time: 1 hour, 58 minutes

Total Time: 3 hours, 8 minutes

Yield: 10 slices

Serving Size: 1 slice

Ingredients

    Ingredients for a 2 lb loaf:
  • 1-2/3 cup warm water
  • 1/3 cup skim milk powder (see notes)
  • 1/4 cup honey
  • 1-1/2 tsp sea salt
  • 3-3/4 cups all-purpose flour
  • 1 cup ground flaxseed
  • 2-1/4 tsp quick-rise or bread machine yeast

Instructions

Measure ingredients into the bread machine pan in the order listed. Select "Rapid" cycle, press start, and let the machine do it's thing!

Notes

If you don't have skim milk powder, then substitute milk for the water and omit the skim milk powder.

We always have a few slices leftover, so my DH’s favorite way to eat this bread is for his morning toast.  It’s great smeared with some natural peanut butter.  Add a glass of 100% orange juice and you’ve got yourself a complete breakfast.  It fills him up for the entire morning.

I’ve never tried making this bread in the oven.  I suppose you could, but this recipe is meant for the bread machine.  If you do end up trying it in the oven and it turns out great, please let me know!

That sounds absolutely wonderful. I have to try it. I usually pack up the bread machine in the summer because I don’t make soups to go with the fresh bread but I am seeing great breakfast potential here!

For sure! Even if we are not having soup, I still make a loaf every week for hubby to enjoy at breakfast!
