Honey-Lime Grilled Chicken

I’ve been dying to share this recipe with you.

This chicken is by far our most favorite grilled chicken recipe.  So, why didn’t I share it sooner?  Well, because I wanted to keep it all to myself.  Just kidding!  The reason I haven’t shared it with you is because I’ve been waiting for grill season to take full effect…and, I didn’t have any decent pictures to post.  I can’t be sharing this amazing recipe without pictures that make you drool!

Not only is this Honey-Lime Grilled Chicken delicious, it’s also extremely easy to make.  All you do is throw some marinade ingredients together in the morning (or the night before if you’re ultra prepared), then let the chicken soak in the marinade all day, and grill it when you get home!

Honey-Lime Grilled Chicken

Prep Time: 10 minutes

Cook Time: 18 minutes

Total Time: 28 minutes

Yield: serves 4

Serving Size: 2 chicken thighs

Recipe adapted from The Dinner Fix

Ingredients

  • 8 boneless, skinless chicken thighs, trimmed of fat
  • For the marinade:
  • 1 egg
  • 1 Tbsp smoked sweet paprika (see notes)
  • 1/4 tsp sea salt
  • 1/4 cup honey
  • 2 tsp sesame oil
  • 2 Tbsp low-sodium soy sauce
  • juice of 1 lime

Instructions

In a medium bowl, mix together all the marinade ingredients. Add the chicken. Cover and marinate in fridge overnight or for at least 4 hours.

Heat the grill at medium heat. Grill chicken for approximately 18 - 20 minutes, or until done. Remove chicken from grill and serve!

Notes

I love the smell and flavour of smoked sweet paprika, I highly recommend you buy some. You can find it in your local grocery store. If you don't have it on hand, you can substitute regular paprika.

This chicken recipe makes extremely moist chicken.  Our whole family loves this recipe, we make it a lot in the summer.  I like to serve it with a side of brown basmati rice and some stir-fried veggies for a complete meal.  And I always make more than we can eat so that I can have the leftovers for lunch the next day!

Sorry Ashley, I don’t provide calories for my recipes anymore as I don’t believe in counting calories. If you really need to know the calories, I recommend using a site like FitDay or My Fitness Pal to enter in the ingredients and figure out the calories.
