I don’t know about you, but I love a big, fresh salad for dinner sometimes. If it were up to me, we would have salad a lot more often, but unfortunately, I live with a bunch of carnivores, so that’s not going to happen any time soon.
In the mean time, as long as I add meat to our salads, I don’t hear any complaints. And, if I add fruit, then the kids love it even more.
I’ve been having a love affair with mango lately. I’m not even sure it’s about the flavor (even though mangoes are quite yummy), I think I’m more in love with their color. I love the bright yellow. It’s so cheery, fresh, and summery. Add in some red pepper and you’ve got yourself the perfect, colorful summer salad!
Grilled chicken piled on some red pepper and mango and then topped off with a sweet and slightly tangy yogurt dressing. What I’m trying to say is that this salad is delicious.
And, in the heat of summer, there is no need to use your oven! You can grill the chicken and peppers directly on the BBQ if you choose.
Hubby and I devoured this salad, while the kids loved “dipping” their chicken and mango in the dressing. This salad would also be great for lunch if you have some leftover chicken to use from the night before. Just be sure to stock your fridge with some ripe mangoes so you can enjoy this salad anytime!Print This
