Mango Chicken Salad

I don’t know about you, but I love a big, fresh salad for dinner sometimes.  If it were up to me, we would have salad a lot more often, but unfortunately, I live with a bunch of carnivores, so that’s not going to happen any time soon.

In the mean time, as long as I add meat to our salads, I don’t hear any complaints.  And, if I add fruit, then the kids love it even more.



I’ve been having a love affair with mango lately.  I’m not even sure it’s about the flavor (even though mangoes are quite yummy), I think I’m more in love with their color.  I love the bright yellow.  It’s so cheery, fresh, and summery.  Add in some red pepper and you’ve got yourself the perfect, colorful summer salad!


Grilled chicken piled on some red pepper and mango and then topped off with a sweet and slightly tangy yogurt dressing.  What I’m trying to say is that this salad is delicious.

And, in the heat of summer, there is no need to use your oven!  You can grill the chicken and peppers directly on the BBQ if you choose.

Mango-Chicken Salad


Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: serves 4



Recipe adapted from Crazy Plates


    For the dressing:
  • 1/3 cup fat-free vanilla Greek yogurt
  • 1-1/2 Tbsp each lime juice and mango chutney (see notes)
  • 1 Tbsp seasoned rice vinegar
  • 1 tsp honey
  • 1/4 tsp each ground cumin, ground coriander, and paprika
  • For the salad:
  • 4 boneless, skinless chicken breasts
  • 2 tsp grated gingerroot
  • 1 clove garlic, minced
  • 2 mangoes, peeled and sliced
  • 2 red peppers, sliced
  • 1/3 cup chopped red onion
  • 8 cups torn lettuce


  1. Preheat grill to medium heat.
  2. Combine all dressing ingredients in a small bowl and set aside until ready to use.
  3. Season the chicken breast with some sea salt and pepper. Grill over medium heat until cooked through (about 15 - 18 minutes).
  4. Spray a skillet with olive oil and add ginger and garlic. Saute over medium heat for 1 minute. Add red peppers and onion and saute until softened. Remove from heat.
  5. Slice chicken.
  6. Divide lettuce among four dinner plates. Top with warm peppers and onion, sliced grilled chicken, and sliced mangoes. Drizzle with dressing.


Mango chutney is a sweet and spicy condiment that you can usually find near the ketchup in your local grocery store.

Hubby and I devoured this salad, while the kids loved “dipping” their chicken and mango in the dressing.  This salad would also be great for lunch if you have some leftover chicken to use from the night before.  Just be sure to stock your fridge with some ripe mangoes so you can enjoy this salad anytime!
