Grilled Chicken and Pineapple Quesadillas

I’m sure you’ve figured out by now that pizza is my favorite food.  But did you know that quesadillas are my second favorite food?  I suppose that should come as no surprise since I’m pretty sure that quesadillas are pizza’s cousin.  I mean, whatever you can put on a pizza, you can stuff inside a quesadilla!

And on the subject of favorite foods…one of my favorite fruits is pineapple.  It’s hard to believe that underneath that prickly stem and tough skin is a juicy, delicious, and sweet fruit.


Have you ever tried grilled pineapple?  If not, you really should.  The heat of the grill caramelizes the pineapple just a little to make it even sweeter!  And since you’re probably already familiar with grilled chicken, why not kill two birds with one stone and grill both the pineapple and the chicken at the same time!


This recipe is the perfect summertime meal.  There is no need to use your oven.  Just grill the chicken and pineapple on the grill, slice them once they are cooked, throw it in between two tortillas, and grill it up!

Grilled Chicken and Pineapple Quesadillas


Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: serves 4

Serving Size: 1 quesadilla

  • 4 large whole wheat tortillas
  • 1/2 of a large pineapple, peeled and sliced
  • 2 boneless, skinless chicken breasts
  • salt and pepper
  • 3 Tbsp BBQ sauce
  • 1 cup light Tex-Mex shredded cheese
  • 1/2 jalapeno, sliced (optional)
  • cilantro
  • non-fat plain Greek yogurt


  1. Heat BBQ grill to medium heat.
  2. Season chicken with salt and pepper. Grill chicken and pineapple slices until chicken is done, approximately 18 - 20 minutes. While chicken is grilling, brush with BBQ sauce. (You may have to remove the pineapple earlier than the chicken if it's starting to dry out.)
  3. Remove chicken and pineapple from grill. Chop pineapple and slice chicken.
  4. Place 4 tortillas on grill. Sprinkle a little bit of cheese on one side of each tortilla. Top with chicken, pineapple, jalapeno (if using), cilantro, and a little more BBQ sauce. Sprinkle with some more cheese and fold over other half of tortilla. Grill for approximately 3 - 5 minutes, carefully flip over and grill the other side.
  5. Remove quesadillas from grill, slice, and serve with Greek yogurt for dipping.


If you don't want to grill your tortillas, you can bake them in the oven. Preheat oven to 400F. Spray a baking sheet with non-stick spray. Place 2 tortillas on the baking sheet. Top with chicken, pineapple, jalapeno, cilantro, BBQ sauce, and cheese. Place remaining two tortillas on top and spray with cooking spray. Place in the oven, and bake for approximately 10 minutes, or until tortillas begins to brown.

You’ll notice I sliced my pineapple a little on the thick side so it was falling out of my tortilla.  However, I really didn’t care since this tasted so dang good!  Of course, any meal with some sweet fruit inside is always a favorite with the kids too.  By the way…I didn’t add the jalapeno to their quesadilla 😉

So, the next time you’re dying of heat and don’t want to turn on your oven, grill up some Grilled Chicken and Pineapple Quesadillas!
