Sweet Chili Chicken Pizza

Whenever the hubby and I go out for dinner to a restaurant (which is very rare when you have 3 kids), he always looks at the appetizer menu to see if they have sweet chili chicken bites.  It’s his favorite appetizer.  I love the flavour of the sweet chili sauce, but I don’t like eating fried chicken, so I usually pass.

When I was browsing the isles of Costco a few weeks ago, I noticed a big gigantic jar of sweet red chili sauce.  Even though this item was NOT on my list, I grabbed it up anyway and was immediately thinking of recipes to use it in.

One of the first recipes that came to mind was to combine hubby’s favorite appetizer and my favorite food, pizza, to make a healthy meal we all can enjoy!  Ladies and gents, I give to you, Sweet Chili Chicken Pizza.

Oh. My. Word.

This is one of the best, if not THE best pizza I’ve made to date.  I’ve combined the flavor of sweet red chili sauce with healthy vegetables, lean chicken, and whole grain pizza crust!

Hubby took one bite and said it reminded him of his beloved sweet chili chicken bites!  Mission accomplished.  What I love about this sweet red chili sauce is that it’s got a hint of sweetness and it’s not too spicy for the kids to enjoy.  I added zucchini and red pepper to this pizza because I loved the color combination, but you could add whatever veggies you like.

Serve this pizza with a side salad and you’ve got yourself a complete dinner.

The next time you are in Costco, be sure to look for the bottle of sweet red chili sauce.  You won’t be disappointed.  I plan on sharing some more recipes in the future that incorporate this amazing sauce.

Sweet Chili Chicken Pizza

Prep Time: 30 minutes

Cook Time: 20 minutes

Total Time: 50 minutes

Yield: serves 6

Serving Size: 1 slice

Ingredients

  • 1 whole grain pizza crust
  • 1/3 cup sweet red chili sauce
  • 3 green onions, chopped
  • 1/2 small zucchini, thinly sliced
  • 1/2 red pepper, thinly sliced
  • 6 oz. boneless, skinless chicken breast, cooked and shredded
  • 3/4 cup light Tex Mex cheese (part-skim mozzarella is fine too)
  • chopped parsley
  • chopped cashews

Instructions

  1. Make pizza crust according to directions.
  2. Spread chili sauce over the crust and top with onions, zucchini, pepper, chicken, and cheese. Place pizza back in the oven and bake until the cheese is melted and crust is turning golden brown, approximately 10 minutes.
  3. Remove pizza from oven and top with parsley and cashews.
  4. Slice and serve.

Notes

If you don't feel like making your own pizza crust, you can buy a pre-baked whole wheat crust.

Ahhh, I need a pizza night soon! This looks amazing. I love sweet chili sauce :) The zucchini on your pizza looks great and I have tons of it now. Plus, my hubby will actually eat it on pizza. Yay!

LOL, yes, always hard to find ways to get the family to eat zucchini. That’s why I hide it under the chicken and cheese on this pizza! Enjoy :)
