If there’s one thing I don’t miss about NYC, it’s all the concrete!  I just can’t imagine not having the ability to go in my backyard and BBQ.  There’s nothing worse than cooking in a kitchen when it’s over 30C outside!

It’s days like this that make me want a simple yet delicious meal, and this one definitely fits that bill.

You are going to love the simplicity of this recipe.  Just put together the marinade ingredients in the morning (or the night before if you’re super prepared), throw in the chicken, squish it all together, and let it sit for the day.  When you get home, all you need to do is throw it on the BBQ, chop up some fresh veggies, and serve!

Our whole family loves these BBQ Chicken Burgers.  This recipe is not only simple, but it’s also healthy:

  • I’ve used a whole wheat sandwich thin instead of a high-calorie white bun
  • The addition of avocado adds healthy fats
  • I’ve used lean boneless, skinless chicken breasts
  • Fresh veggies and low-fat dip are a great way to get your kids to eat their veggies!

Cook Time: 18 minutes

Total Time: 4 hours, 28 minutes

Yield: serves 4 - 6

Serving Size: 1 BBQ Chicken Burger

Recipe adapted from The Healthy Family

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup low-sodium ketchup
  • 2 Tbsp brown sugar
  • 1/2 cup salsa
  • 1 tsp Worcestershire sauce
  • 4 whole wheat sandwich thins
  • 1 avocado, sliced
  • 1 tomato, sliced
  • lettuce
  • low-fat cheese
  • Your favorite fresh vegetables
  • Your favorite low-fat dip (I like Tzatziki)

Instructions

In a small bowl, combine the ketchup, brown sugar, salsa, and Worcestershire sauce.

Place chicken breasts in a large resealable bag. Pour in the marinade. Seal the bag and squish the chicken and marinade together. Place in fridge for at least 4 hours.

Preheat grill to medium (350F.)

Remove chicken from bag and grill until cooked through (approximately 15 - 18 minutes.) Place on a bun with your favorite toppings.

Serve BBQ Chicken Burgers with veggies and dip.
