Well hello there! I’m finally back from my week long trip to New York City! I sure had a lot of fun, but I’m more than happy to be home. I feel like I need another vacation day to recover from my whirlwind trip. Do you ever feel that way when you get back from your vacation? No rest for the wicked…there is laundry to be done, and grocery shopping, and…
Oh yes, and of course, recipes to be shared!
If there’s one thing I don’t miss about NYC, it’s all the concrete! I just can’t imagine not having the ability to go in my backyard and BBQ. There’s nothing worse than cooking in a kitchen when it’s over 30C outside!
It’s days like this that make me want a simple yet delicious meal, and this one definitely fits that bill.
You are going to love the simplicity of this recipe. Just put together the marinade ingredients in the morning (or the night before if you’re super prepared), throw in the chicken, squish it all together, and let it sit for the day. When you get home, all you need to do is throw it on the BBQ, chop up some fresh veggies, and serve!
Our whole family loves these BBQ Chicken Burgers. This recipe is not only simple, but it’s also healthy:
- I’ve used a whole wheat sandwich thin instead of a high-calorie white bun
- The addition of avocado adds healthy fats
- I’ve used lean boneless, skinless chicken breasts
- Fresh veggies and low-fat dip are a great way to get your kids to eat their veggies!
I bet you already have everything needed to make this delicious BBQ Chicken Burger. So, what are you waiting for?!
