No-Bake Strawberry Pie

It’s time for this week’s sweet treat…and it’s a good one.

One thing I love about summer is the abundance of fresh fruit.  Every week, I buy a ton of fruit, and every week, it all gets eaten!  One of my favorite summer fruits is strawberries.  There is nothing sweeter than a fresh, red, juicy strawberry.  Unless of course you add said strawberries to a creamy, chocolaty pie!

Check out those ruby red strawberries.  And of course, the chocolate crust and creamy filling make this pie absolutely delectable!

I originally found this recipe in an issue of Cooking Light, but of course, I had to adjust it a touch, like I do all recipes.

  • I used healthy coconut oil to replace the vegetable oil
  • I omitted the strawberry-flavoured liqueur
  • I used no-sugar-added jam

I’m sure it’s obvious by now that this dessert was pretty popular.  I mean really, who doesn’t like chocolate, strawberries, and cream?!  And I love that it’s no-bake.  You can whip up this dessert in no time and let it sit and chill in the fridge for a few minutes before serving.

I bet this would also be great with raspberries or blueberries or blackberries.  Feel free to experiment.  You can’t go wrong with these simple yet delicious ingredients!

No-Bake Strawberry Pie

Prep Time: 50 minutes

Total Time: 50 minutes

Yield: serves 8

Serving Size: 1 slice

Recipe adapted from Cooking Light

Ingredients

  • 1-1/4 cup chocolate wafer crumbs
  • 3 ounces bittersweet chocolate, finely chopped
  • 2 tsp coconut oil, melted
  • 6 ounces low-fat cream cheese, softened
  • 1/3 cup icing sugar
  • 3/4 tsp vanilla extract
  • 2 cups fat-free frozen whipped topping
  • 2 Tbsp no-sugar added strawberry jam
  • juice of 1 lemon
  • 1 pound strawberries, hulled and cut in half

Instructions

Spray a 9-inch pie plate with olive oil spray and set aside.

Place the chopped chocolate in a medium microwave-safe bowl. Microwave on high for 45 seconds or until chocolate melts, stirring every 15 seconds. Add the coconut oil and chocolate wafer crumbs. Stir to combine.

Press crumb mixture into bottom of prepared pie plate. Place in freezer for 15 minutes or until set.

In a medium bowl, beat together cream cheese, icing sugar, and vanilla. Fold in whipped topping and spread mixture over bottom of chocolate crust. Place in fridge to chill for approximately 30 minutes.

Before serving, place jam in a large bowl. Add lemon juice and stir to combine. Add halved strawberries and mix together. Arrange strawberries over pie. Slice and serve!
