Peach and Brie Quesasillas with Honey Drizzle

In my neck of the woods, we are smack dab in the middle of peach season!  I don’t know about you, but I’m a big fan of peaches.  Perhaps it started with the popular peach-flavored candy, Fuzzy Peach?!  Although, come to think of it, those were more sour than sweet.  Or maybe their soft skin drew me in and tempted me to see what was wrapped up inside.

Either way, peaches taste wonderful.  But you know what makes them even better?

Pairing them with cheese!



When my mom brought me a bunch of fresh peaches last week, I wasn’t sure what I was going to do with them, besides biting into one and eating it on the spot.  That’s when I remembered a recipe I had found ages ago for peach and brie quesadillas.


You all know I’m a huge fan of quesadillas.  And for some reason, I love quesadillas with fruit in them!  It’s the whole “sweet and savory” thing I suppose.  I did make a couple of changes from the original recipe to “healthify” it a little:

  • I used whole wheat tortillas instead of white processed ones
  • I used a low-fat Brie
  • I used less honey

I suppose you could classify these quesadillas as an appetizer, but I was in the mood for a meatless meal that night, so I served it to the family with a big salad on the side.  It was a light meal, but still loved by all.  My kids kids love tortillas, fruit, and cheese.  If you don’t think your kids will like Brie, then feel free to use part-skim mozzarella instead.  However, when you melt brie cheese, it loses it’s tartness and it becomes quite mild.

So whether you want a light dinner or want to impress your guests with a delicious appetizer, I highly recommend you grab some peaches at the market and make these quesadillas!


Peach and Brie Quesasillas with Honey Drizzle


Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: serves 4 (or 8 as an appetizer)

Recipe adapted from


  • 4 large whole wheat tortillas (use brown rice tortillas to make this gluten-free)
  • 3 peaches, sliced
  • 1/2 red onion, sliced
  • 1 tsp coconut oil (or olive oil)
  • 1/2 small round of low-fat Brie, sliced into thin wedges
  • thyme
  • honey


  1. Heat a skillet over medium-high heat. Add coconut oil and let melt. Add onion and turn down heat to medium-low. Saute onion until brown and caramelized, about 15 minutes. Remove onion from skillet.
  2. In the same skillet, add peaches and saute over medium heat for 3 minutes, until peaches have softened. Add a sprinkle of thyme and stir. Remove peaches from skillet.
  3. Wipe out skillet with a paper towel. Spray skillet with olive oil mister and heat on medium heat. Place a tortilla in the skillet and add some Brie, onion, and peaches to one side of the tortilla. Fold the other 1/2 of the tortilla over and cook until golden brown. Carefully flip over tortilla and brown the other side. Remove quesadilla from pan and repeat process with the remaining tortillas.
  4. Slice quesadillas into wedges, drizzle with a little honey, and serve.

Love the addition of peach to the topping, anything that makes me think I’m eating a healthy recipe is a-okay in my book.;-) So excited for next week too!! 🙂
