You all know that I love lemon. But did you know that I also love raspberries? They are one of my favorite fruits. And did you know that lemons and raspberries go great together? Well, I’m here to tell you that they do!
Which is why I absolutely love these Raspberry Lemon Bars.
Don’t those look absolutely delightful? And you’ll never guess how easy they are to make. Only 4 ingredients. No lie.
When it comes to making treats, I tend to gravitate towards recipes that 1) don’t take a lot of time to make, and 2) make enough for a crowd. And of course the obvious, it has to taste amazing. This recipe definitely meets all three criteria.
My family loved these bars and so did my friends. Everyone was asking for the recipe, and my answer to that is always, “It’ll be on the blog soon!”
So, as promised, here it is.
Recipe slightly adapted from Kitchen Meets Girl
Ingredients
- 1 box lemon cake mix
- 2-1/2 cups quick cooking oats
- 3/4 cup coconut oil, melted
- 1 - 12 oz. jar reduced-sugar raspberry jam
Instructions
Preheat oven to 375F. Spray a 9 x 13-inch pan with an olive oil mister. Set aside.
Combine cake mix and oats. Stir in melted coconut oil until mixture is crumbly. Press 3 cups of the crumb mixture into your prepared pan.
Spread jam over the crumb mixture. Sprinkle with remaining crumb mixture.
Bake in oven for 25 minutes, or until lightly browned. Cool completely on a wire rack.
Cut into squares and serve immediately (leftover squares can be stored in an airtight container in the fridge.)
