Weekly Meal Plan

It’s been a week since I returned from my mini vacation, and things are slowly starting to get back to normal.  The laundry has been done, the house has been cleaned, and the fridge has been stocked.  I feel like I can breathe now.  I can get back to my daily schedule, including our weekly meal plan…which I almost forgot to do this week (I must still be in some sort of post-vacation denial…)

Here is this week’s family-friendly and healthy meal plan:

Day 1

Day 2

Breakfast for Dinner (we do this a lot when DH isn’t home.  I make eggs, toast, pancakes…whatever the kids are in the mood for.  It’s easy and they love it!)

Day 3


Taco Salad (this is my 6 year old’s most requested meal!)

Day 4


Roasted Salmon with Lemon-Basil Pesto
Baked Oven Fries
Steamed Broccoli

Day 5

Broccoli Cheddar Stuffed Chicken

Day 6


Veggie Pizza

Day 7


Healthy Cobb Salad
