It’s officially Fall! I don’t know about you, but Fall is one of my favorite seasons. The crisp morning air, the leaves changing color, and the addition of comfort-type foods onto our weekly menu! I’m not retiring the BBQ for the season yet, but I sure plan on making more of our meals indoors.

I must say, these Skinny Beef Quesadillas are a family favorite. Not only are these delicious, but there are veggies hidden in there which make them healthy!
These quesadillas taste a little like a cheeseburger. So if you’re into cheeseburgers, you’ll love these. How did I make them “skinny?”
- I’ve used extra-lean ground beef
- I’ve substituted whole grain tortillas for processed white flour tortillas
- I’ve added finely chopped vegetables for some extra nutrition
Yes, you can see some grill marks on that tortilla, but that’s because I bought a grill pan last year to use on the stove! However, you can also put these together and then bake them in the oven until they are nice and crisp. Either way, I know these will be a hit with the whole family.
