Sausage and Mushroom Pizza

Yipee!  Another pizza recipe!  I know I’m excited.  I could eat pizza all the time.  Actually, I make it once a week for the family, whether they like it or not.

My husband is a huge fan of hot Italian sausages.  Usually sausages are made with pork and tend to have a lot of fat, which is why I don’t make a lot of sausage dishes.  However, I have recently found some hot Italian sausages made with chicken.  Since chicken is a leaner meat, I much prefer to use those instead of the pork ones.

This pizza is amazing.  Not only does it taste amazing, but it’s actually healthy.  Who would have thought a sausage pizza could be classified as “healthy?”

So, you’re probably wondering what makes this pizza lighter than a regular pizza…

  • Like I mentioned above, I’ve used chicken sausage instead of pork
  • I’ve added more mushrooms to replace some of the meat
  • I’ve used a whole grain pizza crust
  • The pizza sauce is low-sodium
  • I like to use less cheese than your typical pizza has

So, what did hubby think of this Sausage and Mushroom Pizza?  Let’s just say, it’s one of his favorites!  For the kids, I make sure to use mild chicken Italian sausage since they don’t like too much heat.  I also don’t pile on the mushrooms on their half of the pizza, just scatter a few mushrooms here and there.  But feel free to do what works for your kid’s tastes!

Serve this pizza with a salad or favorite veggie and you’ve got a complete meal.

Sausage and Mushroom Pizza

Prep Time: 40 minutes

Cook Time: 10 minutes

Total Time: 50 minutes

Yield: 8 slices

Serving Size: 1 slice

Recipe adapted from Eat, Shrink, & Be Merry

Ingredients

  • 1 whole grain pizza crust
  • 8 oz Italian chicken sausage (mild or hot)
  • 1/3 cup thinly sliced red onion
  • 2 cups thinly sliced mushrooms
  • 1 Tbsp fresh oregano leaves (or 1 tsp dried)
  • 1/2 cup low-sodium pizza sauce
  • 1 cup light Tex-Mex cheese

Instructions

  1. Preheat oven to 425F.
  2. Follow the directions on how to make the whole grain pizza crust (or buy your own from the store.)
  3. While dough is rising, spray a skillet with olive oil and heat over medium heat. Remove and discard casing from sausage. Break apart sausage into skillet and cook along with the onions. Cook and stir until sausage is cooked through and onions are soft. Break up any large chunks of sausage while it's cooking.
  4. Stir in mushrooms and cook until tender, about 7 minutes. Add oregano, stir, and remove from heat.
  5. Spread pizza sauce over partially baked pizza crust. Top with mushroom and sausage mixture. Sprinkle with cheese.
  6. Place pizza in oven for about 10 minutes, or until cheese is melted and crust is turning golden.
  7. Slice and serve.
