Strawberry Balsamic Chicken Salad

I know it’s September, and I know that the beloved strawberry will soon be leaving store shelves for the winter.  But, while the warm weather hangs on and you can still buy fresh strawberries in the store, I figured it was still appropriate to share my recipe for Strawberry Balsamic Chicken Salad.



I love a good salad.  Not only are they healthy, but they are so easy to put together.  Just take your favorite ingredients, throw them on top of a bed of lettuce, and drizzle with some dressing.  I like to make it a complete meal by adding some protein like lean chicken breast.


When I originally made this salad, I didn’t add any cheese.  But as soon as I started eating it, I knew it needed some goat cheese!  I love the tang of goat cheese, it adds such a nice flavor and texture to this salad.  If you don’t like goat cheese, feel free to use feta!

The slightly spicy grilled chicken paired with sweet strawberries was a perfect combination.  The kids ate the chicken, strawberries, tomatoes, and lettuce.  But feel free to add whatever vegetables your kids love.


Strawberry Balsamic Chicken Salad


Prep Time: 40 minutes

Cook Time: 18 minutes

Total Time: 58 minutes

    For the marinade:
  • 4 small, boneless, skinless chicken breasts
  • juice of 2 limes
  • 3 Tbsp extra virgin olive oil
  • 2 tsp honey
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp fresh ground pepper
  • 1/4 tsp sea salt
  • For the salad:
  • 2 cups sliced strawberries
  • 6 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 8 cups mixed salad greens
  • 1 red pepper, chopped
  • 1/3 cup sliced black olives
  • 1/2 cup grape tomatoes, halved
  • 1/2 cup chopped walnuts
  • 1/2 cup crumbled light goat cheese


  1. In a medium bowl, combine strawberries, balsamic vinegar, and honey. Toss together and let stand for 30 minutes.
  2. In a small bowl, whisk together lime juice, olive oil, honey, cumin, cinnamon, pepper, and salt. Put chicken breasts in a resealable plastic bag and add marinade. Let chicken marinate for 30 minutes. Preheat grill to medium heat. Grill chicken until cooked through, approximately 18 minutes.
  3. Divide lettuce, red pepper, olives, and tomatoes among four dinner plates. Top with sliced chicken breasts, walnuts, goat cheese, and strawberries. Drizzle with the balsamic-honey dressing.
