Mandarin Sesame Chicken Salad

by Jen on November 2, 2012

Just because summer is over and I’m more into cooking healthy comfort foods, doesn’t mean I don’t like to eat a nice, fresh salad once in a while.  A salad can still be comforting, especially when I serve some fresh bread with it for my husband and growing boys.

After sharing some of my favorite salads: BBQ Chicken, Healthy Cobb, and Mexican Pasta Salad, I thought I would make a salad with a bit of an Asian flare this time.

The sweet mandarins paired with the crispy baked wontons and warm grilled chicken make an amazing salad!  This Mandarin Sesame Chicken Salad was filling enough to be a complete dinner.

My kids loved the fruit and the crispy wontons.  If your family is anything like mine, I served some whole wheat bread on the side…men and their carbs!

This Mandarin Sesame Chicken Salad would also make the perfect lunch, especially if you have some leftover chicken from the night before.  And this time of year, you could use fresh mandarin oranges since there are plenty to be found in the supermarket!

So the next time you are looking for a fresh dinner idea, make this Mandarin Sesame Chicken Salad!

Mandarin Sesame Chicken Salad

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: serves 4

Recipe adapted from Iowa Girl Eats

  • 6 cups mixed salad greens
  • 3 boneless, skinless chicken breasts
  • For the marinade:
  • 2 Tbsp low-sodium soy sauce
  • 1/2 tsp sesame oil
  • 2 tsp honey
  • 1/2 tsp ground ginger
  • 1/2 tsp garlic powder
  • For the dressing:
  • 1/4 cup rice vinegar
  • 2 Tbsp honey
  • 1 Tbsp extra-virgin olive oil
  • 1/2 tsp sesame oil
  • 1/4 tsp sea salt
  • pinch of ground black pepper
  • Salad Toppings:
  • 1/4 cup cilantro, chopped
  • 3 green onions, sliced
  • 1 can mandarin oranges, packed in water (or 2 fresh mandarin oranges)
  • 1/4 cup sliced almonds, toasted
  • 10 wonton wrappers, sliced
  • 1 Tbsp sesame seeds

  1. Combine all marinade ingredients and marinate the chicken for at least 15 minutes. Cook chicken on BBQ grill or a non-stick grill pan until no longer pink. Remove and let cool for 5 minutes then slice.
  2. Preheat oven to 400F. Slice the wonton wrappers into thin strips. Spray a baking sheet with olive oil spray and place wonton strips on top. Bake in oven until wontons are golden brown and crispy, approximately 10 minutes. Remove from oven and let cool.
  3. Place all dressing ingredients in a jar and shake to combine. Set aside.
  4. Divide lettuce among 4 dinner plates. Top with sliced chicken, salad dressing, and salad toppings.

Do you have the container breakdown per serving for this recipe?
