Apple Cinnamon Oatmeal Muffins

I’ve got a great recipe to share with you today.  I love making muffins.  I prefer them over cookies because when it comes to cookies, who can stop at just one?!  But a muffin is usually filling enough for a snack.  Pair it with some Greek yogurt for protein, and you will be full for at least a couple of hours.  Plus, they are the perfect snack when you are on the go and need to feed yourself and your little munchkins.

And because I’m The Fit Housewife, you just know these are made with ONLY healthy ingredients!

Do me a favor and never buy muffins at the store again, m’kay?  They are loaded with sugar (most likely high-fructose corn syrup), unhealthy fat, and sodium to keep their shelf life.  Trust me, these are easy to make and they freeze well.  So make a double batch and stick some in the freezer, that way you’ll always have some when in need.

I bring these to the kids soccer games so they have something healthy to snack on.  Because you know that snacks are the only reason my kids play soccer, right?!  I’m not joking.  So I may as well bring something healthy.

Here’s a handy tip: If you want to have freshly baked muffins first thing in the morning, mix the wet and dry ingredients seperately the night before.  Cover the dry ingredients and keep them at room temperature overnight.  Cover the wet ingredients and place them in the fridge overnight.  Before hopping in the shower in the morning, preheat your oven, spray a muffin tin with olive oil, combine the wet and dry ingredients, fill the muffin cups, and pop them in the oven.  The muffins will bake while you shower!

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 12 muffins

Serving Size: 1 muffin

Ingredients

  • 1-1/2 cups quick-cooking oats
  • 1-1/2 cups boiling water
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup coconut palm sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 1/4 cup raw honey, melted
  • 1/4 cup unsweetened applesauce
  • 1 egg
  • 3 Tbsp coconut oil, melted
  • 1 tsp vanilla
  • 1-1/2 cups peeled and grated apples (about 2 apples)
  • Cinnamon sugar to sprinkle on top (optional)

Instructions

  1. Preheat oven to 350F. Line a muffin tin with paper muffin cups or spray with olive oil and set aside.
  2. Pour boiling water over oats in a medium bowl. Stir and let stand for 15 minutes.
  3. Combine both flours, palm sugar, baking powder, baking soda, and salt in a large bowl.
  4. In a small bowl, whisk together honey, applesauce, egg, coconut oil, and vanilla. Add applesauce mixture to oats and stir until smooth. Add oat mixture to flour mixture and stir until dry ingredients are moistened. Fold in grated apples.
  5. Divide batter among 12 muffin cups. Sprinkle each muffin with some cinnamon sugar if desired. Bake in preheated oven for 20 minutes, or until a wooden toothpick inserted in center of muffin comes out clean. Remove from pan and let cool.
