It’s zucchini season! All over Facebook I’m seeing pictures of home grown zucchini, along with the question, “What do I do with all of this zucchini?” What I love about zucchini is that it’s so versatile. You can cook with it, bake with it, use it in place of pasta…there are so many ways to enjoy it.
To be honest, I really dislike raw zucchini, I actually can’t stand it, it makes me gag! But, I don’t mind it cooked. I know, I’m weird. So when I came across this recipe for Roasted Zucchini, I had to give it a try. Oh my gosh, I was not disappointed! This Parmesan Baked Zucchini and Tomatoes side dish is amazing. Even my kids and husband throughly enjoy it.
This dish will literally take you just a few quick minutes to prepare, then just toss it in the oven and let it roast until it’s cooked and the cheese is nice and melted. Yummy!!
