I’ve been making this Broccoli and Cheese Stuffed Chicken for a while, but it isn’t until now that I’ve gotten around to sharing it here! While it may look hard to make, it’s actually very easy.

First, you just start by pounding the chicken breast. You want it thin so it’s easy to roll. Then add a little bit of the chopped broccoli and some cheese, roll up, and bake!

I’ve been feeding my kids broccoli since they were really little, so they don’t mind the broccoli in this recipe. Plus, with the added cheese, what kid wouldn’t want to eat this chicken?!

I served this chicken with a side salad, but I bet roasted baby potatoes would make a great addition as well.

Serving Size: 1 stuffed chicken breast

Ingredients

  • 4 boneless, skinless chicken breasts (pounded thin)
  • 1/2 cup of finely chopped broccoli
  • 3/4 cup light cheddar cheese, shredded, divided
  • Sea salt
  • Fresh ground pepper
  • Garlic Powder

Instructions

  1. Preheat oven to 350F. Spray a 9 x 11 baking dish with olive oil and set aside.
  2. Pound chicken breasts to 1/4-inch thickness. Season chicken with salt, pepper, and garlic powder.
  3. Place broccoli and 1/2 cup cheese in middle of chicken breasts and fold in sides. (you can also use toothpicks to hold then together.)
  4. Place stuffed chicken in prepared baking dish and bake for 35 minutes. Remove from oven and sprinkle the rest of the cheese on top and continue baking an additional 10 - 15 minutes, or until chicken is cooked through.
