I love a simple and delicious meal! That is the whole purpose of this blog – to share simple and tasty recipes that are not only good for you, but also work well with your busy schedule.

This Maple Dijon Chicken is no exception. It was so good and easy to make that I actually made it back-to-back weeks! The first time I made it, I wanted to test it out and see what the family thought of it, would it be blog worthy!? As you can probably guess, HECK YES it’s blog worthy!

Just 5 ingredients make up this chicken recipe. And I’m guessing you already have them all in your kitchen! If you don’t have chicken thighs, then you can certainly use chicken breasts, you’ll just have to adjust the cooking time.

I always have fresh rosemary because it’s an herb that lasts a long time in the fridge, plus it tastes good on almost anything! I use rosemary in a lot of my recipes. And of course, dijon mustard is also a kitchen staple. It goes well in many recipes as well as salad dressings. I like to use maple syrup as a natural sweetener, so I always have a bottle of that on hand too.

Like I mentioned before, I made this recipe back-to-back weeks in our house and no one complained! Plus, if you’re super busy, this recipe is so easy to make, you can make it any night of the week. Serve with some homemade oven fries and a side salad for a complete meal!

Maple Dijon Chicken


Prep Time: 5 minutes

Cook Time: 35 minutes

Total Time: 40 minutes

Yield: serves 4

Serving Size: 2 chicken thighs

  • 8 boneless, skinless chicken thighs
  • salt and pepper to taste
  • 1/3 cup dijon mustard
  • 1/4 cup pure maple syrup
  • 1 Tbsp rice wine vinegar
  • Chopped fresh rosemary


  1. Preheat oven to 400F.
  2. Place chicken thighs in a square baking dish and sprinkle with salt and pepper.
  3. In a small bowl, mix together the dijon mustard, maple syrup, and vinegar.
  4. Pour dijon mixture over chicken thighs, turning the thighs so they are fully coated.
  5. Place thighs in the oven and bake for 35 - 40 minutes, or until a meat thermometer reads 165F.
  6. Sprinkle chopped rosemary overtop and serve.
