I personally love how simple it is to make, and that it only contains healthy ingredients! I just threw everything into my Vitamix, blended it together, and poured it into the pie plate. The mixture was even good before it was frozen!

This pie is gluten-free, vegan, and 21 Day Fix approved. What more could you ask for in a dessert?!

This pie is perfect for summer because it’s a great frozen treat! My boys devoured this pie. They don’t get to have peanut butter that often since they can’t bring it to school, so when they get a chance to have it, they absolutely love it. And as a mom, I love that I’m giving them a healthier treat!

Healthy No Bake Peanut Butter Pie

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: serves 10

Ingredients

  • Crust:
  • 1 cup rolled oats (use gluten free if preferred)
  • 3-4 Tbsp maple syrup
  • 1 cup almond flour
  • Filling:
  • 1 cup natural peanut butter (I used creamy)
  • 2 large ripe bananas
  • 3 Tbsp almond milk
  • 2 tsp pure vanilla extract
  • 1/4 tsp sea salt
  • 1/3 cup mini chocolate chips (optional)

Instructions

  1. Add crust ingredients to a food processor or blender and process until smooth. Transfer mixture to a 9-inch pie dish and with a spatula, press until evenly uniformed on all sides.
  2. Rinse out your food processor or blender and add the filling ingredients. Process until smooth, pausing and scraping the sides. Pour filling into the prepared crust and smooth the top with a spatula. Sprinkle with chocolate chips (optional.)
  3. Cover with plastic wrap and freeze for 3-4 hours, or until frozen. Thaw on counter for about 30 minutes before slicing.
  4. Store leftover pie in the freezer.

I tried this recipe as a healthy alternative to all the junk being passed around on the 4th of July. It was a huge hit! Even got requests for more at other holidays and parties. It’s great too, because I have a family member who is allergic to eggs and usually cannot have much of the desserts made. It was perfect for her.
