Oven Baked Zucchini Chips! A healthy and low carb way to enjoy chips!

Do you crave salty or sweet things?

I used to crave salty things like chips all the time! I could eat an entire large bag of Doritos in one sitting.

Thank goodness I have seen the light and no longer do that! I just can’t imagine the excess calories and unhealthy fat I was consuming back then…my poor body.

That doesn’t mean I still don’t love a yummy crunchy chip once in a while! But now, I opt for a healthier choice, like these Oven Baked Zucchini Chips!

These zucchini chips are SO addicting! I wanted to try just one for a taste test, and I kept grabbing another, and another, and another…LOL

Then I called the kids down to give them a try. They were impressed too! I noticed they couldn’t stop snacking on these chips either! When I told them that the chips were made from zucchini, they didn’t believe me.

The great thing about these Oven Baked Zucchini Chips is that you can use whatever seasoning you like on them. You can keep it simple with just some sea salt, or add a bit of fresh ground pepper. I used the Sweet and Spicy Seasoning from Flavor God.

This seasoning was perfect for these chips!

I used my mandolin slicer to slice the zucchini, but if you don’t have one, no problem, just use a sharp knife! I also like to spray my chips with coconut oil or olive oil rather than brush them in oil – I find I use less oil that way.

Oven Baked Zucchini Chips


Prep Time: 20 minutes

Cook Time: 2 hours

Total Time: 2 hours, 10 minutes

Serving Size: serves 2

A healthy and low carb way to enjoy crisp chips!


  • 2 zucchini, thinly sliced (I used my mandolin)
  • olive oil or coconut oil spray
  • 1 tsp seasoning of choice


  1. Preheat oven to 225F.
  2. Place zucchini slices in one layer between paper towels to help draw out the liquid.
  3. Line 2 large baking sheets with parchment paper. Place zucchini slices on prepared baking sheet.
  4. Spray zucchini with oil, sprinkle with seasoning.
  5. Bake for 2 hours, or until golden brown and crispy. (You may have to remove some that are cooking quicker so that they don't burn.)
  6. Cool completely before serving.
