A copycat version of Chipotle’s Cilantro Lime Rice – except this one is made in the rice cooker!

Cilantro Lime Rice! A copycat version of Chiptole's favourite rice, except this one is super easy to make because it uses your rice cooker! Simple, healthy, weeknight side dish.

Everyone always tells me how much they love Chipotle! Living here in Canada, I had no idea what everyone was talking about. And then a few years ago, I went to New York and finally, I understood!

So, rather than flying to New York to eat chipotle, why not make it at home?!

Cilantro Lime Rice. A chipotle favourite that you can make at home - in your rice cooker! A simple and healthy side dish.

Are you wondering why we eat white rice? White rice is not your enemy, and I’m sorry if you’ve been lead to believe that. Did you know that white rice may actually be better for you than brown rice?! While we don’t eat rice very often, when we do, it’s white rice and I always make it in my rice cooker. I’ve tried the stovetop method before, and it’s just plain messy! A rice cooker is so easy and it makes wonderfully moist rice.

This Cilantro Lime Rice pairs well with my Honey Lime Grilled Chicken or my Healthy Crockpot Thai Peanut Chicken. Or for a vegetarian idea, top it with some black beans, corn, and salsa!

Cilantro Lime Rice {In Rice Cooker}


Prep Time: 5 minutes

Cook Time: 35 minutes

Total Time: 40 minutes

Yield: serves 4

Serving Size: 3/4 cup

A simple way to make Chipotle's famous rice!


  • 1 cup long grain white rice (I actually love using Basmati rice with this recipe)
  • 2 cups water
  • 1/2 tsp sea salt
  • 2 tsp olive oil, divided
  • juice of 1 lime
  • 3 Tbsp chopped fresh cilantro


  1. Add rice, water, salt, and 1 tsp of olive oil to your rice cooker. Turn your rick cooker on and cook.
  2. When rice is done, add the lime juice, cilantro, and the remaining oil. Gently mix together and serve warm!
