Do you ever get tired near the end of the day and you just don’t want to make dinner?! Ya, I thought so!

I know many of you are busy working moms who don’t have time to spend hours in the kitchen making healthy meals for your family. You want to make a delicious and healthy meal, but without all the prep work, right?!

Here is a great side dish idea that only takes a couple of minutes to prep. Then you just put it in the oven and let the oven do the rest.

It was simply delicious!

I used a “sweet and spicy” seasoning, but you can use whatever seasoning you like. Anything goes in this recipe, even if you just want simple salt and pepper! I also used a medium sized organic cauliflower because the ones you can buy in the grocery store are gigantic and will take a lot longer to cook, so the smaller, the better. You could roast 2 small cauliflower heads at the same time if you need to make a lot.

We enjoyed this with dinner one evening, but you could even use this recipe to prep your lunches for the week! Just portion it out and you’ve got a healthy vegetable to add to your lunch each day.

Seasoned Whole Roasted Cauliflower

Prep Time: 5 minutes

Cook Time: 50 minutes

Total Time: 55 minutes

Yield: serves 6

Serving Size: 1 cup

A simple and delicious way to enjoy cauliflower. Tender on the inside and crispy on the outside!

Ingredients

  • 1 head cauliflower
  • 3 Tbsp olive oil
  • 1 Tbsp seasoning

Instructions

  1. Preheat oven to 425F.
  2. In a small bowl, stir together olive oil and seasoning of your choice.
  3. Using a large knife, cut the stem from the bottom of the cauliflower crown, taking a bit off the bottom of the crown if needed, to get a flat surface.
  4. Place cauliflower crown, cut side down, in a large baking dish. Slather the top with the olive oil mixture.
  5. Place in oven on middle rack and bake until fork tender and brown on top, approximately 45 - 50 minutes.
