A simple and delicious way to enjoy roasted cauliflower!
Do you ever get tired near the end of the day and you just don’t want to make dinner?! Ya, I thought so!
I know many of you are busy working moms who don’t have time to spend hours in the kitchen making healthy meals for your family. You want to make a delicious and healthy meal, but without all the prep work, right?!
Here is a great side dish idea that only takes a couple of minutes to prep. Then you just put it in the oven and let the oven do the rest.
It was simply delicious!
I used a “sweet and spicy” seasoning, but you can use whatever seasoning you like. Anything goes in this recipe, even if you just want simple salt and pepper! I also used a medium sized organic cauliflower because the ones you can buy in the grocery store are gigantic and will take a lot longer to cook, so the smaller, the better. You could roast 2 small cauliflower heads at the same time if you need to make a lot.
We enjoyed this with dinner one evening, but you could even use this recipe to prep your lunches for the week! Just portion it out and you’ve got a healthy vegetable to add to your lunch each day.
