When feeding a family of 5, sometimes you have to get creative. I can easily spend a ton of money on meat at the grocery store each week. But I like to save some money on groceries if I can, and one way to do that is to utilize leftovers!

So, once a week, we have a whole chicken for dinner. It can be a rotisserie chicken from the store or done in the crockpot, or a whole chicken cooked on the BBQ. It’s a great way to feed a family of 5 and still have leftovers!

I love having leftover chicken because there are so many things you can do with it!

Not only does this recipe save me money at the grocery store, it also saves me a ton of time since I don’t have to cook the chicken! You can make this recipe and use freshly cooked chicken, but you’ll just have to add on about 20 – 25 minutes of cooking time.

So why is it skinny? I’ve seen many chicken parmesan casserole recipes that include pasta. But….I wanted to take that out since 1) I personally don’t eat pasta, and 2) it adds a lot of calories. I also recommend buying a sugar-free pasta sauce. Check the ingredients list in your pasta sauce to see if there is any sugar added, there shouldn’t be! The only sugar should be natural – from the tomatoes!

This casserole can also be frozen before baking! You could make a couple of them and then put one in the freezer. Just let it thaw in the fridge the night before you want to heat it up. And, if you have any leftovers once you’ve cooked it, those freeze well too!

Skinny Chicken Parmesan Casserole


Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Yield: serves 4

A quick, healthy, and delicious family meal perfect for any night of the week.


  • 12 oz cooked chicken, chopped or shredded
  • 1-1/2 cups no sugar added pasta sauce
  • 1/4 cup Parmesan cheese
  • 3/4 cup part-skim mozzarella cheese, shredded
  • 1 Tbsp olive oil
  • 1/2 cup Italian-style bread crumbs
  • Fresh basil for garnish (optional)


  1. Preheat oven to 350F.
  2. Spray an 8 x 8-inch baking dish with coconut or olive oil spray.
  3. Place the cooked chicken in the baking dish and add the pasta sauce. Mix together until combined.
  4. Spread the cheeses on top.
  5. In a small bowl, mix together the breadcrumbs with the olive oil.
  6. Sprinkle the breadcrumb mixture on top of the cheese.
  7. Bake for 25 minutes, until breadcrumbs are golden brown and casserole is bubbling.
  8. Serve with some chopped basil if desired.
