I’ve been on the hunt for delicious, grain free muffins for the past few weeks. I’ve come across quite a few good ones, but also a few duds. It’s not always easy baking with alternative grain free flours, or no flour at all. Sometimes I’ll get tiny hard muffins or sometimes they fall apart. But I refuse to go back to baking or cooking with flour, so I’m determined to find recipes that work!

If you haven’t tried coconut flour in baking, you must! It has a nice naturally sweet flavour, and it’s perfect for baked goods. I will warn you though, the texture when you’re mixing everything together is quite different compared to regular flour. But when you bake it up, it turns out really great and absolutely delicious.

My boys loved these muffins! But who doesn’t love the flavours of apple and cinnamon. I put these muffins in their lunches since they are nut free as well.

Grain Free Apple Cinnamon Muffins


Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 9 muffins

Serving Size: 1 muffin

These Grain Free Apple Cinnamon Muffins make the perfect snack for your kid's school lunches!


  • 1/2 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 4 eggs
  • 1/4 cup raw honey, melted
  • 2 tsp + 1 tsp cinnamon, divided
  • 1 tsp baking soda
  • 1 tsp apple cider vinegar
  • 1/4 tsp sea salt
  • 1 organic apple, cut into small pieces


  1. Preheat your oven to 350. Line a muffin tin with 9 paper or silicone muffin liners.
  2. In a large bowl, mix together the coconut flour, coconut oil, eggs, honey, 1 tsp of the cinnamon, baking soda, vinegar, and salt.
  3. In another bowl, mix together the apple pieces and 2 tsp of the cinnamon.
  4. Put 1 Tbsp of batter in the bottom of each lined muffin tin.
  5. Add some of the cinnamon apple pieces on top to make the second layer.
  6. Add more batter on top of the apple pieces.
  7. Sprinkle the tops of the muffins with some extra cinnamon (optional)
  8. Bake for 20 minutes in the oven, or until a toothpick inserted in the center comes out clean.
