I’ve been enjoying hummus for quite a while now, it’s actually the only way I will eat raw veggies!

But since going low carb, high fat, I’ve realized that regular hummus isn’t really part of that plan since it’s made with chickpeas. I’m not saying that chickpea hummus is bad, but with this lifestyle, I have chosen to stay away from beans. Not only are they higher in carbs, but they also give me a bit of a tummy ache and I feel very bloated after eating them.

Also, I’ve noticed that most hummus brands in the store contain canola or soybean oil, which are two oils I stay away from. I stay away from these oils for two reasons:

  1. They are highly processed oils and contain a large amount of omega-6’s, which when eaten in excess, can cause inflammation in the body.
  2. Typically, these oils come from highly Genetically Modified crops. And personally, I choose to stay away from GMO products.

Of course, you can make your own hummus at home with olive oil, which would be your best bet!

Since going low carb, I didn’t want to give up my beloved hummus though, so I decided to look around on Pinterest and find something I could use instead of chickpeas.

I found one that used cauliflower!! I’ve actually been using cauliflower a lot these days, it’s so versatile and takes on any flavour. So I thought, why not give it a shot.

WOW! I was blown away by how good it was! To be honest, I like it even better than regular hummus. But, this version was a little bland. I like to have more flavour in my food.

Instead of steaming the cauliflower, I decided to roast it! What a difference that made!!

This hummus is extremely flavourful and nice and thick, which is perfect for dipping veggies in. My favourite veggies to use are broccoli, bell peppers, and cucumbers.

I had some leftover bacon from the kid’s breakfast, so I decided to chop it up and sprinkle it on top. Of course, that’s totally optional, but a great idea for serving this to guests.

Roasted Caulifower Hummus

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 2 - 3 cups (depending on the size of cauliflower head)

Serving Size: 2 Tbsp

This low carb Roasted Cauliflower Hummus is full of flavour and you won't even know it's not made with chickpeas.

Ingredients

  • 1 head cauliflower, chopped into florets
  • 3 Tbsp + 1 tsp extra virgin olive oil, divided
  • 1/4 cup tahini
  • 2 cloves garlic
  • 1/2 tsp sea salt
  • 1/4 tsp cumin
  • juice from 1 lemon
  • Optional toppings: chopped bacon, parsley, olive oil, cumin

Instructions

  1. Preheat oven to 425F.
  2. Line a baking sheet with parchment paper and place cauliflower florets on top. Drizzle 1 tsp olive oil over cauliflower and toss to coat. Roast the cauliflower florets for 20 minutes, or until they are starting to brown in places.
  3. Place the cauliflower florets, 3 Tbsp olive oil, tahini, garlic, salt, cumin, and lemon juice in a food processor or high powered blender. Blend on high until smooth.
  4. Allow roasted cauliflower hummus to cool before serving with your favorite veggies.

I used to love hummus, but never thought to try and make it with cauliflower.

I find garlic (and onions) make me soooooo bloated it’s painful. What would you use to replace this?
