Eating a low carb lifestyle doesn’t mean you have to give up foods you love. Try these low carb, grain free granola bars – perfect for a quick and simple snack!

Being a busy mom to 3 boys, I love recipes that don’t take much time! These low carb and grain free granola bars are just that!

I used to buy my boys Fiber 1 granola bars, thinking they were a “healthier” option. One day, I decided to look at the ingredients list…and I was blown away.

I like to use the app Fooducate to see how a certain food rates. Fiber 1 is rated at a C-. Here’s just some of the ingredients:

  • Semisweet chocolate chips (sugar, chocolate liquor, cocoa butter, soy lecithin, natural flavor)
  • corn syrup
  • sugar
  • canola and palm kernel oil
  • high maltose corn syrup
  • soy lecithin
  • fructose

What is marketed as a “healthier” alternative is actually not healthy at all!

Now, I make my own granola bars! With this recipe, you just throw everything in your food processor and then put it into a pan to bake. It’s simple and you can pronounce and feel good about every single ingredient. These are also grain free, gluten free, refined sugar free, dairy free, and Paleo.

Low Carb, Grain Free Granola Bars

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 12 squares

Serving Size: 1 square


  • 1 cup raw almonds
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup sunflower seeds
  • 1/4 cup sesame seeds
  • 1 tsp cinnamon
  • 1/4 tsp sea salt
  • 1 tsp vanilla extract
  • 2 Tbsp molasses
  • 1/4 cup almond butter
  • 1/4 cup sweetener of choice (I use Swerve)
  • 2 eggs
  • Sugar free chocolate chips (optional)


  1. Preheat oven to 350F. Line an 8 x 8-inch baking pan with parchment paper.
  2. Place all ingredients into a food processor and pulse until mixed.
  3. Spoon mixture into pan and spread with your hands to fit the pan.
  4. Bake for 15 minutes, or until golden brown. Remove from oven and let cool for 15 minutes (after removing from the oven, you can top with some chocolate chips if you like.)
  5. Lift granola bars from pan and cut into squares.
