Low Carb Grain Free Sugar Free Granola. A simple recipe using only whole, natural ingredients. A great breakfast option. Paleo.

For the past two months, I’ve been making my kids grain free breakfasts. This has included bacon and eggs and almond flour pancakes. While they love both of those breakfasts, I wanted to mix it up a little and come up with something really simple, something healthy I could make them, even when we’re in a rush to get out the door to school.

One of my favourite snacks used to be yogurt and granola. I used to make my granola with oats, but since going grain free, I wanted to find a granola recipe that didn’t have any grains. However, in my search, I found that many of them had a lot of sugar added. It’s not that I’m against raw honey or maple syrup as a sweetener, but I would prefer to keep them to a minimum.

Then I came across this recipe for Banana Granola! I thought it was a great idea to used mashed banana to sweeten and hold together the granola. I always have brown bananas hanging around since I personally don’t eat them anymore.

My boys love this granola! I’ve been giving it to them for breakfast with full fat Greek yogurt and blueberries. So delicious! And as a mom, I love that I’m giving them a healthy breakfast before school without all the sugars!

This granola is super easy to make and your house will smell amazing while it’s baking.

Low Carb Grain Free Sugar Free Granola

Ingredients

  • 1 cup raw cashews, roughly chopped
  • 1 cup raw walnuts, roughly chopped
  • 1 cup unsweetened shredded coconut
  • 1/2 cup pumpkin raw seeds
  • 1/2 cup sunflower seeds, unsalted
  • 1/3 cup raisins
  • 2 tsp ground cinnamon
  • 1 tsp nutmeg
  • 1/4 cup coconut oil
  • 2 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 ripe bananas, mashed

Instructions

  1. Preheat your oven to 350F. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, combine the nuts, seeds, coconut, raisins, and spices.
  3. Melt the coconut oil in a small pot on the stove. Stir in the maple syrup, vanilla, and mashed bananas until combined.
  4. Pour the banana mixture over the granola and stir it all together, making sure it's all coated in the banana mixture.
  5. Spread the granola out on your prepared baking sheet and bake in the oven for 25 - 30 minutes, stirring halfway through so that it cooks evenly. Once the granola reaches a golden brown colour, remove from oven and let cool.
  6. Store in an airtight container (preferably glass) in a cool dark place or the refrigerator.
