I’m not sure if you know this about me, but I used to hate zucchini!

I know, crazy right? Considering how many recipes I have on here that use zucchini, you would have thought I loved the stuff.

But truth be told, I still don’t like it raw. The only way I’ll eat it is if it’s cooked, like in these delicious Grain Free Chocolate Zucchini Muffins!

My boys are getting to the ages where they are going to start eating more. Just this week, my 11 year old son has been asking for seconds after dinner each night! And he’s asking for more meat!! This is a first, and I’m assuming from talking to other moms of boys, that it’s going to get a whole lot worse!

Seeing as I don’t buy snacks from the grocery store anymore, I’m always on the lookout for healthy snacks that I can give them, either to bring to school or have at home.

These muffins are the perfect choice! Not only are they nice and chocolaty, they also have zucchini in them which is such a healthy vegetable:

  • Zucchini contains potassium, magnesium, and folate which help promote heart health.
  • The presence of vitamin A in zucchini helps promote eye health.
  • Zucchini contains calcium which help strengthen bones and teeth.
  • The high fiber content of zucchini is good for cholesterol.

The verdict? My boys love them! And they had no idea these muffins were packed with a healthy vegetable.

Even if you have kids that don’t like zucchini, I promise you, they won’t even know it’s in there!

Grain Free Chocolate Zucchini Muffins


Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Serving Size: 1 muffin

Even if your kids don't like zucchini, they will enjoy these Grain Free Chocolate Zucchini Muffins!


  • 1/2 cup almond butter (or your favourite nut butter or nut-free butter)
  • 1 ripe banana, mashed
  • 1 egg
  • 2 Tbsp honey
  • 1/4 cup unsweetened cocoa powder
  • 2 Tbsp ground flax
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 large zucchini, shredded (approximately 1 cup)
  • 3 Tbsp chocolate chips


  1. Preheat oven to 375. Prepare a muffin tin by lining with muffin liners or spraying with coconut oil.
  2. Add all ingredients to a blender, except zucchini and chocolate chips, and blend on high until smooth and creamy. Stir in zucchini and chocolate chips.
  3. Pour batter into prepared muffin cups, filling each cup 3/4 full.
  4. Bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow muffins to cool in the pan for 10 minutes before removing. Store in an airtight container for a week.
