One of the things I was worried about when I switched our family over to a low carb lifestyle, was finding enough variation of foods to keep my boys happy.

Besides the usual bacon and eggs for breakfast, I was wondering what could I make that was quick, easy, delicious, and filling.

I’ve made pancakes in the past, but it was using the huge bag of pancake mix you can get at Costco, which isn’t grain free and definitely not low carb.

So I did some digging, and found a bunch of pancake recipes on Pinterest. While they looked good, most of them involved coconut four and a ton of eggs. Not that I’m against coconut flour and eggs, I just wanted something a little simpler.

After much trial and error, I finally arrived at a fluffy low carb pancake recipe that uses almond flour!

My boys absolutely love these pancakes! It’s their favourite breakfast in the morning. What I love about these pancakes is that I can easily make these on a weekday morning before they go to school! Plus I know they are getting some good nutrition for their day.

I like to serve it with some freshly whipped cream* on top (heavenly) or a little drizzle of pure, organic maple syrup. Add some berries on the side and you have a delicious, filling, low carb breakfast.

*To keep this dairy free, use coconut whipped cream instead of whole cream.

Delicious and Fluffy Low Carb Pancakes


Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 10 pancakes

Serving Size: 2 pancakes

These low carb pancakes are fluffy, delicious and easy to make!


  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1/2 tsp ground cinnamon
  • 1-3/4 cups almond flour
  • 3/4 cups almond milk


  1. Heat a skillet to medium heat (300F.)
  2. In a small bowl, whisk together eggs, vanilla, salt, and cinnamon.
  3. Add almond flour and milk and whisk together. You may need to add a Tbsp or more of milk depending on how thick you like your batter.
  4. Using a 1/4 cup measure, scoop the batter onto your skillet, leaving enough room in between to flip them. Cook for approximately 2 minutes, then flip and cook another 2 minutes.
  5. Remove pancakes from skillet and top with your favourite toppings such as organic whipped cream, maple syrup, or fruit!
