I’m so excited to share one of my favourite recipes with you!

I don’t know about you, but I love a good casserole. They are easy to make and are the ultimate comfort food.

But when eating low carb, many casseroles are a no go. Most of them contain some sort of pasta or else potatoes. Since we don’t eat those things anymore, we have to get a little creative.

That’s where cauliflower comes in.

Now, you might be thinking, cauliflower? I don’t like cauliflower.

And to that I say, have you ever had it made this way?

Trust me, you can’t even detect the cauliflower taste in this casserole. It’s loaded with so many good things that it hides the cauliflower flavour.

Low Carb Chicken Loaded “Potato” Casserole

Prep Time: 20 minutes

Cook Time: 25 minutes

Total Time: 45 minutes

Yield: serves 6

A delicious and low carb casserole the whole family will love.

Ingredients

  • 1 large head of cauliflower, riced (about 3 cups)
  • 4 slices nitrate-free bacon
  • 1 cup sour cream
  • 4 green onions, divided
  • Meat from 1 small whole cooked chicken, chopped (about 3 - 4 cups chicken)
  • 3/4 cup shredded cheddar cheese, divided (I like to use Tex Mex cheese for added flavour)
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 350F. Spray a large casserole dish with coconut or avocado oil and set aside.
  2. In a skillet, cook bacon until desired crispness. Remove bacon from skillet and set aside.
  3. In the same skillet, add riced cauliflower and cook for 10 minutes on medium heat.
  4. In a large bowl, combine the sour cream, 3 green onions, chicken, 1/2 cup cheese, salt and pepper.
  5. Add cauliflower to bowl and stir to combine everything.
  6. Put mixture into prepared casserole dish, sprinkle with remaining cheese and bake for 20 minutes.
  7. Sprinkle chopped bacon and remaining green onion on top before serving.
