For years I’ve been making my family shake and bake chicken. It’s something everyone looks forward to.

First, I started buying the store-bought Shake N’ Bake that comes in a package. But I read the ingredients one day and was floored! It contained a lot of unhealthy ingredients such as:

  • Enriched wheat flour (the natural vitamins & minerals have been extracted!)
  • Partially hydrogenated soybean and cottonseed oil
  • Canola Oil
  • High Fructose Corn Syrup

Is that really what I want to be feeding my family?

So then I switched to making my own “shake n’ bake” coating with whole wheat flour. It’s actually quite good, and if you’re not low carb, I recommend these!

But since switching to low carb, I don’t even keep wheat flour in the house anymore!

Instead, I stock almond flour and coconut flour. They can both be used in almost any recipe that calls for flour.

For this Low Carb Shake And Bake Chicken recipe, I used both almond and coconut flour. I love using a bit of coconut flour in my recipes, it adds a touch of sweetness and you can’t taste the coconut.

These Shake And Bake Chicken drumsticks were delicious! They actually turned out really crispy and even made delicious leftovers for my kid’s school lunches the next day.

I like to bake these on my metal cooling rack. I find that makes them crispier than if you were to just bake then on top of the baking sheet.

This recipe only took me a couple of minutes to prepare, so it’s a great weeknight dinner idea the whole family will love! Serve with a side of steamed broccoli topped with butter 🙂

Low Carb Shake And Bake Chicken


Prep Time: 5 minutes

Cook Time: 40 minutes

Total Time: 33 minutes

Yield: 10 drumsticks

Serving Size: 2 drumsticks

A simple, delicious, and healthier way to enjoy Shake And Bake Chicken!


  • 3 lbs chicken drumsticks (skin on)
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 tsp Himalayan salt
  • 1/2 tsp ground pepper
  • 2 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • coconut oil spray


  1. Preheat oven to 450F.
  2. Line a baking sheet with foil and place a metal cooling rack on top.
  3. Spray cooling rack with coconut oil spray.
  4. Place almond flour, coconut flour, salt, pepper, paprika, cumin, onion powder, and garlic powder in a large zipper-closure bag.
  5. Add chicken to bag (a few pieces at a time) and toss to coat.
  6. Place coated chicken on prepared cooling rack.
  7. Bake for 20 minutes, turn chicken over, and bake for 20 more minutes, or until juices run clear and chicken is cooked through.

Wow, this looks so tasty! I’m on a low carb diet at the moment, so this is gonna definitely help me get through as I think I ran out of my not expensive, low carb recipes! Thanks a lot
