We eat a lot of zucchini in our house. Our favourite way to enjoy zucchini is in these Turkey Taco Zucchini Boats! So good.

Zucchini is a great low carb vegetable. Plus, it’s so versatile. We even make pizza crust out of it.

One of the vegetables we don’t eat much of since going low carb is potatoes. I still make them occasionally for the family, like these oven fries, but besides that, we prefer to eat a lot of other low carb veggies. However, I do sometimes miss having a loaded baked potato! The sour cream, cheese, and bacon…oh boy!

I thought, why not enjoy the same flavours of a loaded baked potato on zucchini!?

I must say, this Bacon and Cheese Hasselback Zucchini was awesome!! It has all the flavours of the loaded potato, but without all the starch and carbs.

Hasselback zucchini is so easy to make. I used some chopsticks to place my zucchini on before cutting it. That allows me to slice the zucchini without cutting through the entire thing.

Then just stuff your sliced cheese in the slits and bake!

Our whole family loved this zucchini recipe. Enjoy it with some grass-fed steak and you won’t even miss the potato!

Low Carb Bacon and Cheese Hasselback Zucchini

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: serves 4

Serving Size: 1 small zucchini

Skip the potatoes and enjoy this low carb version of bacon and cheese zucchini.

Ingredients

  • 4 small zucchini
  • 8 oz sliced cheese (can use cheddar, mozzarella, marble, whatever!)
  • 4 slices bacon, cooked and chopped
  • 4 Tbsp sour cream
  • chopped chives

Instructions

  1. Preheat oven to 400F. Spray a glass or ceramic baking dish with coconut oil and set aside.
  2. Slice off the ends of the zucchini. Place a chopstick on both sides of the zucchini and slice until you hit the chop sticks. Start at one end and work your way down to the other end.
  3. Arrange sliced zucchini in your prepared dish.
  4. Cut slices of cheese in half and stuff cheese between each slice of zucchini.
  5. Cover dish with foil and bake in the oven for 30 minutes.
  6. Remove from oven and top with sour cream, bacon, and chives.
