I’m always on the lookout for new side dish recipes.

I don’t usually have a problem planning the main part of our meal, which typically consists of grass-fed meat. But sometimes I struggle with what to serve with it. We have our favourites such as broccoli or green beans smeared in butter or a nice easy salad. But after a while, that can get repetitive.

The Low Carb High Fat Beginners Guide

One of my favourite veggies is cucumber. I love¬†how fresh and crunchy it is. It’s a great vegetable to cut up and eat raw. So I was looking for something a little different to do with it.

I’ve seen cucumber and avocado salads, and it’s one I have a lot. But I wanted something without avocado since the kids aren’t huge fans of it.

Instead of using avocado, I decided to use bacon!

We love bacon in our house! It’s a kitchen staple. But combining it with mayonnaise, cucumber, and tomato brings it to a whole new level.

I decided to spiralize the cucumber in this salad for a pretty look, but if you don’t have a spiralizer, then you can either use a vegetable peeler to make cucumber ribbons or just dice some cucumber.

This salad is really simple to put together plus it tastes great with a freshly grilled burger or steak!

Yield: serves 4

A delicious low carb salad perfect for summer.

Ingredients

  • 2 cucumbers (diced or spiralized)
  • 1 cup chopped tomatoes
  • 4 slices of cooked bacon, chopped
  • 3 Tbsp mayonnaise (make sure it's made with ONLY olive oil or avocado oil)
  • 1/2 tsp garlic powder
  • Sea salt and pepper to taste

Instructions

  1. Add all ingredients to a large bowl and stir to combine.
