I’ve been on a smoothie kick lately! Maybe it’s the hot weather we’ve been having, or maybe I just love how easy it is to make them.

Just throw everything in the blender and viola, a complete meal that keeps me full for hours.

I’ve been experimenting with a lot of different recipes, trying to find the perfect ones. But the one flavour I kept coming back to was mojito!

I love a good mojito when we go out to eat. The combination of mint and lime is so refreshing.

Getting just the right texture was really important to me. I don’t like smoothies that are too icy or too runny. It took a lot of failed attempts, but I think I finally got it right! (If you prefer your smoothie a little more runny, feel free to adjust the amount of ice.)

The protein I’ve added to this smoothie is collagen peptides. I love using collagen in my smoothies. It really helps my nails, hair, skin, bones, and joints. You could always use another protein powder of your choosing, or you can even leave it out.

Low Carb Mojito Smoothie

Serving Size: serves 1

Combine the flavours of mint and lime for a delicious and refreshing low carb smoothie.

Ingredients

  • 1 cup ice cubes
  • 1 cup unsweetened almond or coconut milk
  • 1 Tbsp ground flax
  • 1 Tbsp coconut oil
  • 2 Tbsp macadamia nuts
  • 1 Tbsp fresh mint leaves
  • Juice of 1 lime
  • 1 cup raw spinach
  • 1/2 tsp vanilla bean powder (can use extract)
  • 2 - 4 drops liquid stevia (optional)
  • 1 scoop collagen peptides

Instructions

  1. Place all ingredients except collagen in a blender. Blend on high speed until mixture is smooth.
  2. Turn blender down to low, add collagen peptides, and blend on low for 10 seconds.
  3. Pour into a large glass and enjoy!
