I love pizza!

Our family used to eat pizza once a week. I’ve always preferred to make a homemade pizza crust rather than the store-bought version. But since going low carb, that whole wheat pizza crust was out of the question.

We did enjoy my zucchini pizza crust. While it’s delicious, it’s not a crust you can pick up and eat with your hands. I’ve also tried Fat Head pizza crust. While it’s delicious, it has too much cheese for my liking.

Lately, we’ve been enjoying a lot of things made with coconut flour! It is a little tricky to learn to bake with since it absorbs a lot of liquid, but once you get the hang of it, it’s quite versatile and delicious. I came across this recipe for coconut flour pizza crust and just slightly modified it.

This coconut flour pizza crust was so good! We all loved it, even the kids. They could easily pick up their slice of pizza and eat it that way – no fork and knife required.

A pizza stone is a great way to cook pizza crust! It makes a wonderful crispy crust on the bottom, which is perfect for this pizza.

I made a pepperoni pizza, but you can put any toppings you like on it. I’ve got a bunch of healthy pizza ideas HERE! Just replace the crust with this coconut flour crust for a delicious low carb option.

Coconut Flour Pizza Crust

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Yield: serves 6

Serving Size: 1 slice

Ingredients

  • 4 large eggs (preferably pasture raised)
  • 1 Tbsp olive oil
  • 1/4 cup parmesan cheese
  • 2 Tbsp ground flax
  • 1/3 cup coconut flour
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp sea salt
  • 1/4 tsp cream of tartar
  • 3/4 cup mozzarella cheese

Instructions

  1. Preheat oven to 375F. Line a baking sheet or pizza stone with parchment paper or a silicone baking mat.
  2. Place all ingredients except mozzarella in a food processor. Process until no lumps remain.
  3. Stir in mozzarella cheese.
  4. Spread dough onto prepared baking sheet.
  5. Bake for 20 - 25 minutes, until top is golden.
  6. Remove from oven and add sauce and toppings. Bake in oven for 10 minutes, until cheese is melted and bubbly.
